How To make Amaretto Chicken
5 Boned Chicken Breasts
3 tb Flour
1 1/2 t Salt
1 1/2 t Ground Pepper
2 t Paprika
1 tb Vegetable Oil
3 tb Butter
1 1/2 tb Dijon Mustard
1 cn 6 1/4 oz Frozen Orange Juice
1 c Amaretto
Mix the can of frozen orange juice with a half can of water. Preheat oven to 350 degrees. Combine flour, salt, pepper, paprika and garlic salt. Coat chicken with this mixture. Heat oil and butter in skillet and saute chicken until brown. Remove and put in casserole. To skillet, add mustard, orange juice and Amaretto. Increase heat and boil, stirring constantly, until thick. Pour sauce over chicken and bake, covered, for 45 minutes. this can be frozen and reheated later. Serves 8 - 10.

3 tablespoons all-purpose flour
1 1/2 teaspoons salt
1 1/2 teaspoons ground white pepper
1 1/2 teaspoons garlic salt
1 1/2 teaspoons paprika
1 (2 1/2- to 3-pound) broiler fryer, cut up (can use 4 bone-in skin on chicken breasts)
3 tablespoons melted butter
1 tablespoon vegetable oil
1 cup amaretto
1/2 cup water
1 (6-ounce) can frozen orange juice concentrate, thawed and undiluted (can use one fresh orange juice)
1 tablespoon Dijon mustard
Combine first 5 ingredients in a shallow dish; stir well. Dredge chicken in flour mixture. Brown chicken in butter and oil in a large skillet over medium-high heat.
Remove chicken to an ungreased 13- x 9- x 2-inch baking dish, reserving drippings in skillet. Add amaretto and remaining ingredients to the skillet; stir well. Bring to a boil; boil, stirring constantly, 2 minutes or until slightly thickened. Pour amaretto mixture over chicken. Cover and bake at 325° for 40 minutes or until chicken is done. Yield: 4 servings.

If it’s not cherry season, you can also replace them with sour or preserved cherries, use the liquid to pour on the cake.
