This sorghum/ jowar millet bread is gluten-free and egg-less.
Sorghum/ Jowar is a naturally gluten-free and nutrient-rich grain. It is a good source of dietary fiber, protein, and micronutrients like copper, zinc, magnesium, selenium, and B vitamins. It is also an excellent source of antioxidants.
You can toast this bread in toasters or on the pan, it gets nice brown color. This bread is also perfect for making sandwiches and in school lunch boxes.

INGREDIENTS:
• 1 ¼ cup popped amaranth (
• 3 tbsp cacao powder (
• 1/3 cup maple syrup
• 1/3 cup coconut oil, melted (
INSTRUCTIONS:
1. Place melted coconut oil, maple syrup, and cacao powder in a bowl and stir to make it smooth.
2. Add the popped amaranth and mix it all together until the amaranth is well covered with the chocolate.
3. Use an ice cream scoop to shape into a small bite, and arrange onto a baking sheet lined with parchment paper.
4. Place in the freezer for at least 20 min. Enjoy!
NOTES:
• You can store these bites in the freezer for up to two months.
• They do melt quick after you take them out of the freezer. Take out a couple at a time to eat.

Making and Using Amaranth Flour: Amaranth Tortillas and Dosas with Roselle Syrup
Last year, I did an overview of growing growing, harvesting, processing, and cooking with amaranth. This is a follow up, that includes a recap of and update on harvesting, as well as how to grind the amaranth seeds into flour, and a few recipes that use it. I muddle through making amaranth tortillas, and put them to the taco test. Then ferment some amaranth batter to make dosas, topped with a syrup, made from our homegrown roselles.
Note: For the dosas, I used equal parts (1.2g) amaranth flour, chickpea flour, and brown rice flour.

GLUTEN FREE BREAD
Ingredients
3 tbsps flax seed powder
1 tbsp fresh yeast
3 tbsps castor sugar
1 cup brown rice flour
1 cup corn flour
1 cup tapioca flour
1½ tsps salt
1 tbsp baking powder
1 tsp apple cider vinegar
¼ cup butter, softened
Black sesame seeds for sprinkling
White sesame seeds for sprinkling
Sunflower seeds for sprinkling
Method
1. Preheat the oven at 180˚C. Grease a loaf tin with butter and set aside.
2. In a large bowl, add flax seed powder and 9 tbsps water. Whisk well and refrigerate for 10 minutes.
3. Take yeast in another bowl and add 1½ tsps sugar. Add 1 tbsp water and mix well. Set aside to activate.
4. In a large bowl, add brown rice flour, corn flour and tapioca flour. Add salt, baking powder, and 1½ tbsps sugar and whisk well. Set aside.
5. Using an electric beater with a whisk attachment, whisk the flax seeds mixture well. Add butter and beat the mixture till well combined.
6. Add remaining sugar and apple cider vinegar, beat the mixture well. Add yeast and a little water. Add the flax seeds mixture and beat the mixture well.
7. Keep adding sufficient water and beat the mixture till a thick batter is formed. Transfer the mixture into the greased loaf tin and tap to even out the surface.
8. Sprinkle black sesame seeds, white sesame seeds and sunflower seeds. Allow the batter to prove till it doubles in size.
9. Bake for 35-40 minutes. Allow to cool completely. De-mould, slice and serve.

INGREDIENTS:
DRY INGREDIENTS:
1 cup almond flour
1 cup arrowroot flour
1/3 cup coconut flour
1 tsp sea salt
2 tsp active dry yeast
1 ½ Tbsp very finely ground chia seeds
2 Tbsp organic psyllium husk powder
WET INGREDIENTS:
1 ¼ cup filtered water
2 tsp maple syrup (This is consumed by the yeast, which lowers the glycemic index.)
1 egg
DIRECTION:
In a large bowl, whisk together the almond flour, arrowroot flour, coconut flour, and sea salt.
Heat water at 105-110 °F. Add 2 tsp of maple syrup and stir. Add the yeast and let the mixture stand for 10 minutes. The yeast should bubble or foam. If it doesn’t, start all over again.
Stir the finely ground chia and psyllium powder into the yeast mixture. Let it stand for 1 minute to thicken, then whisk.
Pour the thickened yeast-chia mixture into the dry ingredients, and mix with a wooden spoon until thick and fully combined. The dough will be slightly sticky, but workable. Knead for 1 minute.
Put the kneaded dough back into the bowl. Cover with a damp cloth and place in a warm spot to rise for 1 hour.
Preheat the oven at 425 °F with a pizza stone (or cooking sheet) inside.
Divide the dough into two balls. Place one of the dough balls on a square parchment paper or a cutting board. Dip your hands in water and shape the other big dough ball into small round balls. Brush with egg wash, if desired. Use a serrated knife to cut a tic-tac-toe pattern on the top.
Slide the prepared dough onto the preheated stone or cooking sheet. Bake for 35-40 minutes. Please note that baking time can vary; the measure of doneness is an internal temperature of 205-210 °F.
Let your baked goodies cool completely on a wire rack. (Not allowing the loaf to fully cool before cutting may result in a gummy interior.) Once completely cooled, slice and serve, or store in an airtight container. To re-crisp crust, toast or reheat at 375 °F for 5-10 minutes.
