In this homestyle biscuit recipe, we cut very cold butter into all-purpose flour, salt, and baking powder. The butter makes these biscuits taste incredible. It also helps to make the crumb light, airy, and tender.
How to make biscuits without a processor: Whisk or sift the dry ingredients together. Cut the butter into small cubes. Scatter the cold butter cubes over the flour mixture, then use a pastry blender or your fingers to cut or rub the butter in until the mixture looks like coarse crumbs.
For buttermilk biscuits, swap the milk in our recipe for buttermilk. Buttermilk adds a tangy flavor to the biscuits and makes them slightly more tender.

Diabexy flour 1 cup
Baking powder 1 tbsp
Salt ¼ tsp
Diabexy sugar 3 tbsp
Salted butter 100g
Chopped pistachio 50 g
???? Add the dry ingredients in a bowl and mix together. Also add the diabexy sugar to it and mix well.
???? In another bowl whip the cold butter until it is light and airy.3-5 minutes with an electric whisk or 10 minutes with a hand whisk.
???? Add the dry ingredients to the whipped butter and mix gently until a dough is formed.
???? To a piping bag add a wide piping tip and fill it with the cookie dough.
???? Make the cookie pattern as shown and add chopped pista on top.
???? Bake at 180 degrees for 15 minutes.
???? Let it cool for 30 minutes on a wire rack and then serve.

Hey everyone ! My today’s recipe is one of our favorite tea time snack which I think we , as a country, just can’t live without! It's none other than Biscuits !
These are not just any other biscuits, I have given them a healthy twist by packing them with healthy and wholesome ingredients such as ragi (finger millet), whole wheat, oats and flax seeds hence they are much more nutritious than any store bought biscuits. Here is the recipe ????

INGREDIENTS
*3/4 cup whole wheat flour/ गेहूँ आटा
*1/4 cup oats/ ओट्स
*1/4 ragi flour/ finger millet/ रागी आटा
*1 tbsp ground flaxseeds/ अलसी पाउडर
*3 tbsp ghee/ butter/ घी
*1/2 tsp baking powder/ बेकिंग पाउडर
*3 tbsp powdered jaggery/ sugar/ गुड़ पाउडर
*1/2 tsp crushed cardamom/ इलाइची पाउडर
*1/2 tsp cinnamon powder/ दालचीनी पाउडर
*1/4 tsp salt/ नमक
*1/4 cup water/ पानी

*Note - Although Ragi is the main ingredient but if it's not available you can also use ????Other millet flours such as Foxtail millet, Perl millet, Buckwheat, Sorghum etc.

INSTRUCTIONS
1- Combine all the ingredients into a bowl and form a dough.
2- Divide the dough into two equal parts. Take one part and flatten it out using a rolling pin ( it doesn’t need to be a perfect circle ).
3- Now using a cookie cutter ( or anything from your kitchen which can help you to get the shape ) cut the dough into small circles. Prick some holes with a toothpick. Save the remaining dough and cut more biscuits using the same method till use the dough completely. Place these small circles on a parchment paper lined baking tray.
4- Keep any type of big cooking pot such as wok or sauce pan on low heat. Place a metal stand in the center so that the baking tray doesn’t come in a direct contact with the heat. Place the baking tray on top the stand and cover the pot ( make sure the pot is completely covered so that there is no gap for any air to seep in through ). Cook for 30-35 minutes. Turn off the heat and remove the lid. Let the biscuits cool completely to get the perfect crispy texture and then store them in an airtight container !!

In a preheated oven, bake for 20-25 minutes at 180°C/ 350°F

1/2 cup wheat flour
1/2 cup desi ghee
1/2 cup jaggery powder (increase 2-3 tbsp for more sweetness)
1 cup roasted ragi flour
1/3 cup cocoa powder (use 1/4 cup, if you want to reduce chocolate flavour)
3/4 tsp baking powder
a few drops of vanilla essence

Bake in preheated oven at 180 degree C for 18 mins, the cookies will look undercooked when they are baked but it will be perfect when they cool down.
