How To make Amaranth Pancakes
1 c Amaranth cereal
1/4 c Whole wheat pastry flour
1 t Baking powder
Egg replacer for 1 egg 3/4 c Soy, rice, or nut milk
In a medium-sized bowl, mix together the cereal, flour, egg replacerand baking powder. Pour the milk over the mixture and beat with a spoon until the ingredients are well combined. If the batter is too thick, you may add a little more milk. Drop the batter by the 1/4 cup into a hot, oiled skillet and cook over medium-high until bubbles begin to appear on the tops of the pancakes. Turn them over and cook until done. The way Americans like their breakfast is pancakes with the use of cinnamon, berries and maple syrup. These amaranth flour pancakes are simply delicious.
GLUTEN FREE PANCAKES
Ingredients
1 cup amaranth flour (rajgire ka atta)
¼ cup castor sugar
2 eggs
½ tsp vanilla essence
A pinch cinnamon powder
½ tsp baking powder
2 tbsps melted butter + greasing
½ cup butter milk
Fresh blueberries for serving
Fresh strawberries or serving
Maple syrup for serving
Fresh mint leaves for garnish
Method
1. Take a large bowl, add castor sugar, break 2 eggs, vanilla essences and whisk till well combined.
2. Add amaranth flour, baking powder, cinnamon powder and mix well. Add melted butter, butter milk, and whisk well.
3. Heat a non-stick, grease with little melted butter and wipe little with the help of tissue paper. Pour one full ladle spoon of the batter and cook on a medium heat till the underside is golden brown.
4. Flip the pancake and cook for the other side till cooked completely.
5. Place the pancake on a serving plate, add blueberry, strawberry and drizzle some maple syrup on top and garnish with fresh mint leaves.
6. Serve.

Aloo Rajgira Pancake
Ingredients Quantity
Rajgira flour 1 cup
Boiled potato 1 no.
Chopped green chilies 3-4 no.
Chopped ginger 1 tsp
Cumin seeds 1 tsp
Sendha salt to taste
Water as required
Oil for greasing
Method:-
1. In a bowl add rajgira flour, boiled potato, green chilies, chopped ginger, cumin seeds and sendha salt to taste, add water and make a thick batter of it.
2. Now in a non stick pan, grease oil and pour the batter, make the pancakes small in size.
3. Cover it and let it cook for some time.
4. Once it is cooked from down, flip it and cook from other side as well.
5. Our pancakes are ready, remove it in a plate and serve hot.
