What you need:
????3 egg yolks
????100g sugar
????240g flour
????1,5 tsp baking powder
????185 ml milk
????75g butter unsalted
????3 big apples
Instructions:
1. Cut apples ???? add cinnamon and sugar. Leave aside.
2. Bite egg yolks with sugar until light white colour. Add milk and almost all butter (melt it in a microwave for 1 min), leave a bit for apples.
3. Add flour and baking powder. Whisk everything very well.
4. Pour the mixture in a pan and put apples on top and pour the rest of butter on top.
5. Bake for 45-50 min at 180C.

German Sunken Apple Cake | Versunkener Apfelkuchen
Special thanks to Anke Perez for sharing her family’s Versunkener Apfelkuchen recipe and teaching our cooking class how to bake this Sunken Apple Cake.
This cake falls into the category sometimes called “Mittwochskuchen” Wednesday Cake. These cakes are all relatively easy and quick to make, for unexpected guests that invite themselves on short notice.
Note German cakes are usually not as sweet as the cakes here in the US.
Tips
- The best cake pan for the job is a Springform, a pan with a removable rim. Easier to get the cake out by removing the rim. (Wal-Mart, amazon and kitchen shops sell them.
This cake recipe is for a 9” Springform.
- Have some wooden toothpicks ready, to test for doneness during baking. Insert the toothpick into the middle of the cake (not into an apple), the cake is done, when the toothpick comes out dry and clean and the cake pulls away from the side of the pan.
Preparation before starting
- Make sure the bottom is correctly inserted in the rim and the rim is tight
- Grease only the bottom of the Springform. Tip line the bottom with
parchment to prevent sticking.
- Put a baking rack in the middle of the oven
- Preheat the oven to 375F.
Ingredients
4 lg, firm, tart apples (like Granny Smith) 200-250 g (8 oz) all purpose flour
125 g (4 oz) butter or margarine
125 g (4 oz) sugar
2 lg. eggs
1 Tablespoon vanilla extract
Pinch of salt
Peel of 1/2 orange (Summer) or 1 Tablespoon cinnamon (Winter) 1 level Tablespoon baking powder
2-3 Tablespoons water or milk (only if the cake batter is too dry) Colored jelly for brushing after baking
Powdered sugar for dusting
Whipped cream for serving
Preparation
- Peel and core one of the apples and cut into tiny chunks
- Mix the flower with salt and baking powder, set aside.
- In a mixer, beat the eggs with the sugar, butter/margarine and vanilla
until light and creamy.
- Add the orange peel and apple pieces to the mixer.
- Add the flour mix a little at the time.
- The batter should be smooth and shiny and should have the
denseness of brownie batter.
- too dry, (the cake will be crumbly), add water or milk 1 Tablespoon at a time.
- too wet, (the apples will sink to the bottom and become covered by the flour, making it a Lost Apple Cake (not the desired result).
Add extra flour 1 Tablespoon at a time.
- Pour the batter into the Springform, spread evenly.
- Peel, quarter and core the remaining apples
- With a sharp knife, make several shallow slits, lengthwise, in each apple
quarter.
- Put the apple quarters on the cake, starting in a circle along the outside
of the cake. (slit side up). Press each piece lightly down on the batter.
- Put the pan into the oven and bake until done and golden.
Depending on your oven 35-55 min. After 30 min start checking.
- When done, remove pan from the oven and let the cake cool in the pan.
- Brush the apples immediately with the jelly, for color and shine. Repeat
if necessary
- When the cake is cooled, carefully remove the rim of the pan lift the
cake off the pan bottom, peel off parchment (if using) and put the cake
on its cake plate.
- Dust heavily with powdered sugar. The jelly on the apples will absorb
the sugar, making them stand out more. Serve with whipped cream or cool whip.
