Dole Whip on Pineapple Cake - Aloha Isle - MK at Walt Disney World may seem a bit over the top but on a hot day in the Magic Kingdom, you may just be able to use the quick energy and cooling action of this treat to forge on ahead and get some more rides in. Step up to the Aloha Isle or make it at home until your return trip to the happiest place on earth.
DOLE WHIP INGREDIENTS:
1 cup of Dole Whip Mix:
3 cups of water
Yep, that’s it!
PINEAPPLE UPSIDE DOWN CAKE INGREDIENTS:
Cake mix (+3 eggs, 1 cup water, 1/3 cup canola oil)
¼ cup of butter
½ cup of soft light brown sugar
Can of pineapple slices or cut your own from a fresh pineapple
INSTRUCTIONS:
1. Mix Dole Whip powder and water in a bowl
2. Put in freezer for 30 minutes so it gets really cold
3. Pour into ice cream machine
4. Run for 25 minutes
5. Scoop out and freeze (it gets more fluffy/frothy/frozen)
6. Pre-heat oven to 350F
7. Mix eggs, water, oil, and cake mix together for about 2 minutes
8. Melt butter and pour into 9”x13” pan
9. Sprinkle brown sugar over butter
10. Place pineapple rings so they don’t overlap
11. Pour cake batter over sugar and pineapple
12. Bake for about 30 minutes or more according to your oven until done
13. Cool on a rack for 10 minutes
14. Turn cake out onto a cutting board
15. Using a large round cookie cutter or knife, cut cake out in pineapple ring sized circles
16. Once cake is completely cool, put on plate and pipe out the Dole Whip on top.
17. Enjoy before it melts!

2 cups granulated sugar
3 eggs, room temperature

Three 2 cups grated carrots
1 cup shredded sweetened coconut
1 cup chopped nuts (optional)
1 tsp vanilla
1 cup Dole crushed pineapple (not drained!) {use the pineapple in JUICE not syrup}
Cream Cheese Frosting:
1 cup butter (softened)
16 oz cream cheese (softened)
2 tsp vanilla
2 lbs powdered sugar
