How To make Almost Fat Free Ginger Cookies
2 c All-purpose flour 3/4 c Prune Butter *
1 tb Ground ginger 1/2 c Sugar
2 ts Baking soda 1 Egg
1 1/2 ts Ground cinnamon 1/4 c Molasses
1/2 ts Ground cloves Sugar for rolling
1/2 ts Salt
Preheat oven to 350F. Into a medium bowl, sift together flour, ginger, baking soda, cinnamon, cloves, and salt. In a large bowl with electric mixer, beat Prune Butter and sugar until well-blended. Beat in egg and molasses until well-blended. Stir in flour mixture until completely mixed. Place a little sugar in a medium bowl. Scoop out heaping teaspoonfuls of mixture. Using your palms, roll into 3/4-inch balls and drop into the sugar. Roll to cover the surface completely; then place balls 2 inches apart on ungreased baking sheets. Bake until cookies are slightly rounded and tops appear lightly browned and crackles. Remove baking sheets to wire racks to cool slightly. The, using a metal pancake turner or palette knife, remove cookies to wire racks to cool completely. Repeat with remaining cookie dough and sugar. Store in airtight containers. * Prune butter is from "Secrets of Fat Free Baking" by Sandra Woodruff. To make one cup, combine 8 oz prunes and 6 tb water or fruit juice in food processor. (I used apple juice for the batch for this recipe.) They also have more dietary fiber, potassiumn and calcium than the originals, and less cholesterol. They were delicious, but rolling them into balls was a nightmare. They stuck to everything. They may need more flour. They also didn't flaten out as much as the originals. They kept their ball shape, for the most part. The Chef's Comments: "Yesterday i took a cookie recipe that I wanted to try, and I made exactly according to the recipe (it was great!) and then I made another batch, using the Prune Butter technique. For cookies, the book suggests replacing all of the fat with Prune Butter, and removing as much sugar as 1/2 to 2/3 the amount of Prune Butter used, to keep sweetness consistent witht he original recipe. The low-fat recipe was a difficult texture to work with, and they didn't spread out nicely when cooking. They remained little clumps. But they did taste very good. I have a hard time telling the difference between the two, believe it or not. Gingerbread Cookie Bites
Gingerbread cookie recipes typically call for eggs, brown sugar, a lot of butter and processed white flour - it’s the spices that make them taste the way they do, not all the junk!
Ingredients:
1 cup quick oats
8 Medjool dates
½ cup cooked sweet potato
4 squares of graham crackers
2 Tbsp hemp seeds
1” thumb of fresh ginger
1 Tbsp Blackstrap molasses
1 tsp cinnamon
1 tsp vanilla extract
½ tsp ground nutmeg
½ tsp sea salt
⅛ tsp ground cloves
Instructions:
Add ingredients to a food processor and pulse until the mixture is well-combined. Roll into 1” balls and refrigerate for 1 hour before serving
Black Forest Smoothie
The taste of chocolate and cherries together are a winning combination!
Ingredients:
⅓ cup raw almonds
¼ cup rolled oats
2 cups water
½ frozen banana
1 ½ cups frozen cherries
4 Medjool dates
2 Tbsp cacao powder
1 Tbsp chia seeds
1 tsp vanilla
½ tsp almond extract
¼ tsp espresso powder
Instructions:
Blend the almonds and water together for 1 minute, then add remaining ingredients and blend for several minutes until completely smooth.
Note: I prefer using frozen cherries for this smoothie; they’re quicker than pitting fresh cherries, and are more consistent (I find that fresh cherries can spoil quickly)
Sun Gold Dressing
Ingredients:
½ cup nutritional yeast
¼ cup water
¼ cup raw cashews
2 Tbsp apple cider vinegar
1 tsp tamari
1 clove garlic
Instructions:
Add all ingredients to a high-speed blender and blend until completely combined.

Vegan Pumpkin Ginger Cookies with gingerbread spices and pumpkin. GF option
FULL RECIPE:
These Ginger Cookies are soft, fudgy, blondie like with flavors from the Pumpkin, Ginger bread spices and molasses. They come together very quickly, are almost one bowl if you use a sifter. Even with 2 bowls used, you need to wash only 1.
Pumpkin adds a softness to the cookies which bakes up to a fudgy cookie texture compared to the snappy crisp molasses cookies. Bake them longer for a more cookie like crumb and less for fudgier. Use spices of choice like ginger bread, pumpkin pie spice or chai spice. Add some candied ginger or orange, or chocolate chips or nuts for variation. these Crackly cookies are also great for Halloween!

4-1/2 cups all-purpose flour
4 teaspoons ground ginger
2 teaspoons baking soda
1-1/2 teaspoons ground cinnamon
1 teaspoon ground cloves
1/4 teaspoon salt
1-1/2 cups shortening
2 cups granulated sugar
2 eggs
1/2 cup Brer Rabbit molasses
3/4 cup coarse sugar or granulated sugar
In a medium mixing bowl stir together flour, ginger, baking soda, cinnamon, cloves, and salt; set aside.
In a large mixing bowl beat shortening with an electric mixer on low speed for 30 seconds to soften. Gradually add the 2 cups granulated sugar. Beat until combined, scraping sides of bowl occasionally. Beat in eggs and molasses. Beat in as much of the flour mixture as you can with the mixer. Using a wooden spoon, stir in any remaining flour mixture.
Shape dough into 2-inch balls using 1/4 cup dough. Roll balls in the 3/4 cup coarse or granulated sugar. Place about 2-1/2 inches apart on an ungreased cookie sheet.
Bake in a 350 degree F oven for 12 to 14 minutes or until cookies are light brown and puffed. (Do not overbake or cookies will not be chewy.) Cool on cookie sheet for 2 minutes. Transfer cookies to a wire rack to cool. Store in a tightly covered container at room temperature for up to 3 days or in the freezer for up to 3 months. Makes twenty-five (25) 4-inch cookies.
