Sugar Free Pudding Cookies Recipe
The Best Chewy Chocolate Chip Cookies~Amish Recipe with Pudding in the Mix!
If you love chewy chocolate chip cookies, you need to bake up a batch or two of these and enjoy with a glass of cold milk! These chocolate chip cookies were inspired by a recipe shared with me by some Amish friends and they stay chewy & fresh for days with the addition of pudding mix added to the dough! Also, no need to chill the chocolate chip cookie dough before baking!

Chewy Chocolate Chip Cookies:
1/2 cup butter (salted or unsalted, softened)
1/2 cup of shortening (such as Crisco, softened)
1 cup of brown sugar (dark or light both work fine)
1/4 cup granulated sugar
2 eggs (room temperature )
*1 pkg of instant vanilla pudding (102 gram or 3.5 oz package~butterscotch or chocolate pudding works well too to change up the flavour of your cookies)
2 cups plus 2 tbsp's all purpose flour
1 & 1/2 tsp's vanilla extract
1 tsp baking soda (not baking powder)
1/4 tsp salt
2 cups semi sweet chocolate chips (or dark chocolate broken into pieces) plus, some chips to decorate tops of dough balls before baking (optional) You can adjust the amount of chocolate chips you add to your cookies too!
...follow directions in video and bake at 375 degrees for 9-11 minutes. Oven temperatures vary, so check your cookies at 9 minutes...do not over bake if you want soft and chewy cookies.
~makes about 2 dozen cookies
*if you use cooked pudding and pie filling mix, use a good 1/2 cup of pudding powder...your cookies will be slightly more thin than using instant pudding but they are still delicious.

Gluten-Free Pistacho & Chocolate Pudding Cookies
Makes 16 cookies
Prep Time: 10 minutes
Cook/Grill Time: 10 minutes
Total Time: 20 minutes
* 12 tbsp butter, softened
* ¾ cup packed light brown sugar
* ¾ cup granulated sugar
* 1 tablespoon vanilla
* 1 egg
* 1¾ cups gluten-free flour mix, we used Bob’s Red Mill flatbread mix
* 1 (3 ounce) package pistachio instant pudding mix
* 2 teaspoons baking powder
* 1/2 teaspoon salt
* 1 cup chocolate chips, mix of milk and white chocolate
Instructions
1. Preheat the grill/oven to 375 degrees F.
2. In a mixing bowl beat together the butter and sugars until fluffy. Add the vanilla and egg and beat until combined.
3. Mix in the gluten-free flour, pudding mix, baking powder, and salt. Continue mixing until the dough comes together.
4. Stir in the chocolate chips
5. About a tablespoon at a time, portion the dough onto an ungreased baking sheet.
6. Bake for 9-11 mins. The cookies might look slightly under-cooked, but that’s ok!!! They are done. Over baking takes away the chewy, squishy, soft texture!
7. Let them cool for a few minutes (if you can!!!) before biting into one of the most delicious cookies you will ever bake!

2 cups all-purpose flour (gluten-free 1:1 flour if needed) spooned and leveled
1/4 cup natural cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup (2 sticks) unsalted butter at room temperature
3/4 cup brown sugar packed
1/4 cup granulated sugar
3.4 ounce package instant chocolate pudding mix
2 large eggs at room temperature
1 teaspoon vanilla extract
1 Tablespoon milk or non-dairy milk
1 cup semi-sweet chocolate chips plus more for topping
5 ounces chopped dark, milk or semi-sweet chocolate plus more for topping

INGREDIENTS:
2 1/4 cup ap flour
3/4 cup white sugar
1 tsp baking soda
1/2 tsp salt
3.4 oz INSTANT vanilla pudding* (one package)
1 cup unsalted butter (room temperature)
1 egg + 1egg yolk (room temperature)
1 1/2 tsp vanilla
3/4 cup sprinkles
IN a large bowl cream your room temperature butter until its light and very fluffy. I used a medium speed on my mixer. Add the sugar, egg and egg yolk and vanilla. Mix again until it's very light and fluffy.
I always have my ingredients prepped and measured ahead of time. Add the baking soda and salt to the flour and whisk a few times. Add this dry mixture to the large bowl of wet ingredients. Also add the contents of the instant vanilla pudding package. Fold with a spatula until it is combined and a cohesive batter. (The batter is going to be VERY dry. This is completely normal.) Once combined, add the sprinkles and fold in gently. Just until it is combined. The cookie batter will feel like playdough!
On a parchment covered cookie sheet, scoop out 2 TBSP of cookie dough and try to get it to resemble round balls. Place them at least 3 inches apart and bake at 350 degrees for 13-15 minutes.
Once they are baked and slightly cool, transfer to a wire rack to cool completely. Store in an airtight container for up to 5 days. Enjoy!! ;)

KETO CHOCOLATE CHIP COOKIES
Makes 18 cookies
1 cup almond flour
1/4 cup coconut flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup unsalted butter, softened
1/2 cup sugar free sweetener
1 egg
1 teaspoon vanilla extract
1/4 cup ChocZero chocolate chips
1️⃣ 00:38 - Preheat oven to 350 degrees. Line cookie sheets with parchment paper. Set aside. To a medium bowl, whisk together almond flour, coconut flour, baking powder, baking soda and salt. Set aside
2️⃣ 01:17 - In a separate large bowl, cream together softened butter with sugar free sweetener until fluffy using an electric mixer. Mix in egg and vanilla.
3️⃣ 01:48 - Slowly mix in dry ingredients. Once combined, stir in chocolate chips.
4️⃣ 02:33 - Using a 1 inch cookie scoop or tablespoon, scoop out a ball of cookie dough and place on the parchment line baking sheet. Flatten the ball down by pressing on the dough with a spatula or the back of a spoon. Space cookie dough about 1 inch apart. Bake at 350 degrees for 8 to 10 minutes
5️⃣ 02:57 - Remove cookies from the oven and continue to let sit on the baking sheet for 2-4 minutes. Cookies will continue to harden and bake as they cool. Once cool enough to handle, transfer to a wire rack to cool further.
