Video Cooking Demonstration and Recipe for Home made Almond Paste made in the Thermochef. This versatile confectionary is used as an undercoat for Fondant in Cake Decorating to prevent the cake colour from bleeding into the Fondant. Its used in sweets, pastries, table decorations biscuits and cakes. Here we show you how to make it quickly and easily. In other videos we will show you how to use it in different recipes. You can buy this product ready made but we don't like the artificial overpowering taste of Marzipan or Artificial Almond Essence. This sweet home made variety, we believe tastes much nicer than store bought and if you have almonds and sugar you can make it, very economically, in a few minutes. Some people shy away from formally decorated cakes because of a dislike for Almond Paste, we think our version enhances and positively adds to the cake tasting experience. We do hope you give it a try. INGREDIENTS: 500 grams blanched almonds 500 grams icing sugar (confectioners sugar) 1 egg white 10 grams pure vanilla extract. Method: Blitz Almonds on speed 7 for 1 minute, scraping down sides frequently. Add sugar and continue to mix on speed 3 stopping every 15-30 seconds to unclump from the bottom, add vanilla extract egg white and mix until well blended. It will be a very stiff mix. Turn onto board and knead until smooth. Store in fridge and use as required.

The most amazing cookie you've never eaten! Italian Almond Paste Cookies
Recipe: Are you searching for a new Christmas cookie? Look no further! This cookie has it all! Chewy, crunchy, nutty, naturally gluten free goodness! Using the homemade almond paste we made earlier this week ( these cookies are easily the best cookie you'll make this year! They are sooooo delicious!!
Italian Almond Paste Cookies Ingredients: 2 egg whites 8 ounces almond paste ⅔ cup sugar ½ teaspoon salt ½ teaspoon vanilla ½ cup almond flour powdered sugar, for dusting sliced almonds, for the tops
Directions: With a hand mixer (not stand mixer) beat the egg whites until frothy and white. Break up almond paste in smaller chunks and add to the beaten egg whites along with almond flour, sugar, salt, and vanilla extract. Beat until well combined. Cover the dough and refrigerate for 1-2 hours or freeze for 30 minutes. Preheat the oven to 350°F. Line your tray with parchment paper, or a silicone baking mat. Portion out 1 inch balls placing them 1-2 inches apart on the tray. Dust balls with powdered sugar. Gently press 2-3 almonds into the tops of the cookies (don’t do just one). Bake for 16-18 minutes, or until edges and bottoms start to brown. Cool on the tray for 10 minutes before transferring to a wire rack to cool completely.

Easy Almond Paste
Recipe: If you've ever searched your market for Almond Paste, this video is going to change your world! Almond Paste is so easy to make and is an amazing addition to baked goods! It keeps a month in the fridge or 3 months in the freezer! So, so easy.
Almond Paste Ingredients: 1 2/4 cups Almond Flour 1 ½ cups powdered sugar ⅛ tsp salt 1 large egg white 1 - 1½ tsps Almond Extract
Directions: Combine almond flour and powdered sugar in the bowl of your stand mixer. Add in your salt and give it a good mix. Add your almond extract to your egg white and add to your mixing bowl Mix on medium until the mixture comes together. Scrape from your bowl and shape paste into a log or roll. Double wrap it in plastic and refrigerate until you are ready to use. Store tightly wrapped for 1 month in the refrigerator or 3 months in the freezer.
