How To make Almond Paste Macaroons
Almond paste: 2 c Blanched almonds
1 1/2 c Powdered sugar; sifted
1/4 c Egg whites; unbeaten
2 ts Almond extract
Cookies: 1 Recipe almond paste
above 2 c Sugar
1/4 ts Salt
4 tb Cake flour; sifted
2/3 c Powdered sugar; sifted
2/3 c Egg whites; unbeaten
Recipe by: Mary M McBride's Encyclopedia of Cooking For the Almond Paste, grind the almonds through the finest blade of a food chopper. Then grind twice again. Mix in the powdered sugar. Blend in the egg whites and almond extract. Mold into a ball. Place in a tightly covered container and refrigerate for at least 4 days to age. Makes 1 pound. Preheat oven to 325 degrees. Soften the almond paste with your hands and work in the sugar, salt, flour, powdered sugar and egg whites. Drop by teaspoonfuls 2 inches apart onto ungreased wrapping paper placed on cookie sheets. Pat the tops lightly with fingers dipped in cold water. Bake for 18 to 20 minutes, or until set and delicately browned. Remove from the

Almond Paste Macaroons with Maraschino Cherries
This is a very easy recipe! Try almond paste for a delicate flavor.

Ingredients:
1 carton Solo Almond Paste (8 oz)
1 egg white (extra large)
½ cup sugar
10 maraschino cherries (cut in half)
Directions:
Preheat oven to 325F
Line cookie sheets with parchment paper. Break the almond paste into small pieces and place in a food processor or mixer.
Add the sugar and mix well. Add the egg white and mix until moist and sticky. Dough should be tacky; approximately 2 minutes.
Drop by rounded teaspoons about 1 inch apart on the lined cookie sheets. Top with ½ maraschino cherry.
Bake for 20 minutes on the middle shelf, move to the upper shelf (about 4” above the middle shelf) and continue to bake another 8 minutes or until light golden brown.
Move parchment paper with cookies onto baking racks to cool. When completely cool carefully peel macaroons off paper. Store in an airtight container.
Yield: about 2 dozen cookies

How To Make Gevulde Koeken: Almond Filled Cookies with Homemade Almond Paste
Learn to make Gevulde Koeken: Dutch Almond Filled cookies, with homemade almond paste from scratch! Buttery goodness, slight savoriness, and a nice balanced sweetness, these large cookies have it all!! These pastries have been around since the 16th century; they used to go by names as gevuld heertje (filled little lord) or gevulde herenkoek (filled lord's cookie) because almonds were (back then) a luxury that only the aristocracy or wealth people could afford. The almond flavor from the filling is great, and the buttery dough around it just compliments it!
The almond paste will take some time in the fridge to develop its flavor, so I recommend doing that a few days before. Also, it makes about twice as much as the gevulde koeken need, so you'll be able to freeze the rest.
The Dutch are crazy about almonds, three of my previous videos where we bake sweets have almonds in them, or it's a common variation.
