After much research and deep dive into French Cuisine, Head Chef Semanti creates her own version of unique, delicious, quick and easy Sandwich spread recipes for Mushroom Pâté and Beetroot Pâté. These Pâté recipes are a healthier option for regular sandwich spreads or butter. High on flavour with subtle undertones of carefully selected ingredients, these Pâté are creamy and rich in taste. They make a perfect pairing for some freshly baked bread or toasts or as spread on sandwich or even a party dip for bread sticks, potato wedges, chips or nachos.

RECIPE:
Mushroom pate
Button mushrooms 200 grams
Onion 1
Garlic 4-5 cloves
Butter 25 grams
Milk powder 2 heaped teaspoons
White wine 2 tablespoons
Olive oil 2 teaspoons
Thyme 1/2 teaspoon
Salt & pepper
Chop mushrooms, onion and garlic
In a pan, heat oil and add the butter
Add the onions - toss around a bit.
Add the garlic.
When onion starts changing colour add the mushroom.
Sauté for 3-4 minutes then add the thyme. Add the wine & the milk powder. Cook on high flame till all the liquid dries up.
Cool & purée in the blender.
Serve cold

Beet root pate
Beet root 2-3
Onion - 1
Garlic - 5-6 cloves
Boiled rajma -4 tbsp
Sea salt to taste
Balsamic vinegar - 2 tsp
Apple cider vinegar - 2 tsp
Olive oil - 1 tbsp
White wine - 1 tbsp
Peanut butter - 1 tbsp
Boil, peel & chop beet root.
Chop onion & garlic.
Heat oil in the pan & add the onion, garlic & sea salt.
When onion starts browning add switch off the flame & add the wine & balsamic vinegar.
Put onions in the blender along with beet root, rajma, apple cider vinegar & peanut butter. Purée - check for salt. Serve cold

Mushroom #Pâté is a #Tasty, creamy, special vegan spread, or another word Pâté which you will never forget once you taste it. The smooth mixture of the #Champignons and almonds make you travel in the world of senses. When you combine it with the whole wheat seed toast, it will be much more than yummy!
I change my diet, I was afraid, like many people do, that I will miss so many things, that I will be not able to stay persistent in my decision. I was just worried to miss the classical animal based Pâté even I was conscious that is so unhealthy, because it is made from the remains of animals. Well, it was not so I thought, especially when I tasted this mushroom and almonds spread. It is one of my big favorites.
It can be made of other kinds of mushrooms too, but the texture and the taste is stronger and more concrete following this recipe.
I can highly recommend this spread, it is also a big source of vitamin E, magnesium, fiber, selenium, which is not often found in vegetables, but we have it in the mushrooms. Beside of strong antioxidant role, it increases vitamin D content and prevents inflammation.
This spread has a low-calorie content, and on the other side it is super healthy!
It can stay in a fridge up to one week, but I think it is not a problem, at least we eat it fast, because it is fabulous and super yummy!

MUSHROOMS PÂTÉ’:
- 2 x Cup Wine cap mushrooms (any mushroom works)
- Herbs
- 1 x onion
- 1 x Cup of almonds
- Olive oil
You may grow your own mushrooms in any pot, raised bed, or area where plants are already growing in your garden!! If you had woodchips on the ground, you could even use your walkways!
This is especially useful if you don't have a lot of room but want to increase the amount of food you produce and learn how to process it efficiently for storage and later consumption!
