How To make Almond Lemon Squares
Lemon batter
4 oz Butter (1/2 cup)
1/4 c Heavy cream
1/3 c Sugar
1 1/3 c Flour
1/3 c Browh sugar, light; packed
1/4 ts Salt
2 Egg yolks
1/2 ts Baking powder
1/4 c Lemon juice; fresh
Almond topping:
1 1/4 c Almonds, blanched; sliced
2 ts Lemon zest; grated
2 tb Brown sugar, light; packed
2 tb Butter
DESCRIPTION: A buttery base complements the crunchy almond and lemon topping in these feather-light bars. Preheat oven to 350~. Butter a 9-inch square pan. In heavy saucepan over low heat, melt butter for both
topping and batter. Mix 1/2 cup of the melted butter and both sugars together. Blend in egg yolks. Stir inlemon juice and cream, mixing until thoroughly combined. Sift together flour, salt and paking powder and combine with sugar/yolk mixture. Pour batter into buttered baking pan, spread evenly with rubber spatula. Set aside. Combine almonds, brown sugar and lemon zest. Add remaining 2 TB. butter and mix well. Cover batter evenly with almond mixture. Bake for 20-25 minutes, or until edges pull away from pan and toothpick inserted comes out moist with crumbs clinging to it. Don't overbake. Place on rack to cool, cut into squares. ►INGREDIENTS:
For the Crust:
1 3/4 cups almond flour
1 tbsp cornstarch
1/4 cup butter melted
1/3 cup maple syrup
1/2 tsp pure vanilla extract
For Lemon Filling:
4 large eggs
1 lemon, zest of
1/2 cup lemon juice 3 large lemons
1/2 cup maple syrup
3 tbsp cornstarch
Cooking spray I use Misto

►DIRECTIONS:
1. Preheat oven to 350 degrees F. Line square 8 x 8 baking dish with parchment paper and spray with cooking spray. Set aside.
2. In a medium bowl, add almond flour, 1 tbsp cornstarch, melted butter, maple syrup and vanilla extract. Stir with spatula until well mixed, transfer to prepared baking dish and flatten with hands and spatula into an even layer. Bake for 15 minutes.
3. In the meanwhile, in a large bowl, add eggs, lemon zest, lemon juice, maple syrup and cornstarch. Whisk very well until no white strands.
4. Remove crust from the oven and very carefully pour filling on a side on top (abrupt pouring will lift the crust). Place back in the oven and bake for 15-20 minutes or until firm but still a bit jiggly in the middle.
5. Remove from the oven and let cool on the counter for 30 minutes. Then transfer to the fridge to firm up for another hour.
6. Cut into 9 squares, dust with icing sugar (if you wish) and serve chilled.

Lemon Bars Recipe
Whenever you are craving for a refreshing dessert I suggest you try these lemon bars. They are made with a very flavorful and tangy lemon filling on top of a rich, buttery shortbread crust. If you like lemon desserts you will definitely love these bars.

Ingredients
Makes about 20-24 bars
Crust
2 cups (250g) all-purpose flour
1/2 cup (100g) sugar
1/2 tsp (3g) salt
1 cup (226g) chilled unsalted butter, cut into small cubes
Filling
1 1/2 cup (300g) sugar
1/4 cup (32g) all-purpose flour
4 eggs
2 tbsp (12g) lemon zest, from about 4 medium lemons
2/3 cup (160g) lemon juice, from about 4 medium lemons
For sifting the top
Powdered sugar
1. Preheat oven to 350F (180C). Grease with butter a 9 X 13 inches (23x33cm) baking pan. Line with parchment paper.
2. Prepare the crust. In a large bowl combine flour, sugar and salt. Add the butter and using a pastry blender or simply a fork cut in the butter until crumbles are formed.
3. Press the mixture onto the bottom and edges of the prepared baking pan using your fingers and back of a spoon. Bake for about 20 minutes until lightly golden brown. Set aside and let cool slightly.
4. Meanwhile prepare the filling. In a large bowl whisk the sugar with flour. Whisk in the eggs and add lemon zest and lemon juice.
5. Pour the lemon mixture over the prepared crust and bake for another 20 minutes until set.
6. Allow to cool completely at room temperature and if possible refrigerate for a couple of hours before serving.
7. Sift powdered sugar on top and cut into bars using a hot knife.

Lemon bars are one of the EASIEST desserts to make but oh so delicious. I love the soft lemon filling paired with a crisp shortbread crust and the flavor is beyond; so bright and zingy with all the lemon flavor from the juice and zest, they’re simply irresistible!
