1 pk Slivered almonds (2-oz)
; chopped 1/3 c Butter or margarine;
-softened 1/3 c Shortening
1 1/4 c Sugar
3 Eggs; separated
1 ts Lemon rind; grated
2 tb Lemon juice
1 ts Vanilla extract
1 ts Almond extract
2 1/3 c All-purpose flour;sifted
2 ts Baking powder
1/4 ts Baking soda
3/4 ts Salt
3/4 c Milk
1/2 ts Cream of tartar
1/4 c Sugar
1 Almond
Apricot glaze; see recipe -for Recipe by: Southern Living Sprinkle chopped almonds into a well-greased 10-inch Bundt pan; set aside. Cream butter and shortening; gradually add 1-1/4 cups sugar, beating well at medium speed of an
electric mixer. Add egg yolks, and beat well. Add lemon rind, juice, and flavorings; beat well. Combine flour, baking powder, soda, and salt. Add to creamed mixture alternately with milk, beginning and ending with flour mixture. Mix after each addition; set batter aside. Beat egg whites and cream of tartar until foamy. Gradually add 1/4 cup sugar, beating until stiff peaks form; fold egg white mixture into batter. Pour batter into prepared pan. Press whole almond just below surface of batter. Bake at 350 degrees for 50 to 55 minutes or until a wooden pick
inserted in center comes out clean. Cool in pan 10 minutes; remove from pan, and let cool completely on a wire 10-inch cake.

Clementine Almond Cake
5-6 Clementines
2 1/3 Cup Almond Flour
1 1/8 Cup Sugar
1 tsp Baking Powder
Sliced Almonds & Powdered Sugar for topping
Toast sliced Almonds put aside
Bring Clementines to a boil reduce heat, cover & simmer for TWO hours. Remove from water and allow to cool ???? . In large bowl beat eggs, add almond flour, sugar & baking powder. Mix together. After Clementines have cooled cut in half remove seeds (if any) then toss in food processor skin & all ???? pulse leaving some small chunks is fine. Add to your egg, flour and baking powder mixture. Stir in very well then pour into greased pan. Preheat oven to 375 degrees. Bake for 45-50 min or when tooth pick insert comes out clean. Transfer to rack let cool for a long time. Cake is even better the next day. But if you’re family is anything like mine, the cake won’t last to the next day ????????♀️ After the cake has cooled, swift powered sugar on top and sprinkle toasted almonds. Bon appétit ????
TIP: I covered cake with aluminum foil at 35-40 min so the top doesn’t burn.

Ingredients:
3 1/2 cups blanched almond flour (12 oz or 340 g)
1 1/2 cups sugar (300 g)
6 eggs, separated
1 cup AP flour shifted (120 g)
2/3 cup orange juice
1 Orange zest
Confectioners sugar for dusting
Directions:
Step#1- In a large bowl add sugar. Separate yolks from egg whites careful not to break the yolk in the whites otherwise the whites won’t whip. ( I warm eggs in warm tap water before using, this makes it very easy to separate.)
Step#2- Add yolks to sugar and with a handheld mixer start mixing until the mixture is light and doubled in size. Almond flour a few spoons at a time and a little orange juice. Alternate until all almond is added.
Step#3- Sift flour in and the rest of the juice. Now orange zest and mix. The mixture will be thick.
Step#4- In a separate bowl and very clean mixer attachments whip the egg whites to stiff peaks.
Step#5- Add a few tablespoons of the whipped whites to the thick mixture to loosen it up. Now gently fold the rest using a spatula and work bottom to top until you have a thick creamy mixture.
Step#6- In a 9-inch (23 in) springform pan lined with parchment paper pour the mixture. Bake at 325°F, 160°C for 50 to 55 minutes.
Step#7- Cool completely before dusting with confectioners and sugar and enjoy any time of the day.
