Delicious and easy Almond Joy Cookies are decadent and loaded with chocolate chips, coconut, and almonds.
Dip them in melted chocolate and you definitely have a winner!
I don’t know about you, but I would like to take this opportunity to thank the genius who put chocolate, coconut, and almonds together.
If I could hug that person, I totally would. I mean, there are not many things that are better in this world, than the combination of those three things.
I decided that I wanted to take the deliciousness that is an Almond Joy candy bar and transform it into a cookie.

Ingredients
1 Cup Butter, softened
3/4 Cup Sugar
3/4 Cup Brown Sugar
2 Eggs
1 Teaspoon Vanilla Extract
1 Teaspoon Coconut Extract
2 Cups All-Purpose Flour
1 Teaspoon Baking Soda
3/4 Teaspoon Salt
2 Cups Coconut Flakes
2 Cups Chocolate Chips
1 1/2 Cups Almonds, chopped
How to Make Almond Joy Chocolate Chip Cookies
[1] First, begin by adding the softened butter, sugar, and brown sugar to the bowl of a stand mixer.
[2] Beat them together until light and fluffy.
[3] Mix in the eggs, vanilla extract, and coconut extract.
[4] In a separate bowl, sift together the flour, baking soda, and salt.
[5] Add the dry ingredients to the wet ingredients and mix until combined.
[6] Stir in the coconut flakes, chocolate chips, and almonds.
[7] Use a cookie scoop to drop the cookie dough onto a baking sheet lined with parchment paper about 2 inches apart.
[8] Bake the cookies at 375° for 9-11 minutes. Keep an eye on them at the end of the baking time because they can become over done quickly.
[9] Allow the cookies to rest on the cookie sheet for 1-2 minutes before transferring them to a cooling rack.

BREAKFAST COOKIE RECIPE
1/2 cup coconut oil
15 drops stevia
1 egg beaten
1 ripe banana, mashes (5.5oz)
2 + 1/4 cup rolled oats
1 tsp. baking powder
1/3 cup chocolate chips
1/4 cup shredded coconut
1/4 cup almonds, chopped
1/4 tsp kosher salt
Pre heat oven to 350.
Line a rimmed baking sheet with a silat mat and set aside.
Mash banana in a large bowl using the back of your fork. Add in one beaten egg, stevia, coconut oil, rolled oats, baking powder and salt. Stir until everything is well combined.
Add in the coconut, almond, and chocolate chips and gently stir until all of the mix-ins are well incorporated.
Scoop one tablespoon of batter and shape into a cookie. Place on baking sheet and continue until you have worked through all the dough (you will need to work in batches).

This delicious 4 ingredient Almond Joy Cooky Recipe is one of the easiest cookies you could ever make! Filled with sweet flaked coconut, milk chocolate, and sliced salted roasted almonds, this is a cookie you'll be ready to mix up any time the craving hits. For extra flavor, drizzle some semi-sweet chocolate or honey over the top of the hot-baked cookies. Here’s what you’ll need to make these Almond Joy Cookies.
INGREDIENTS:
14 oz bag of sweetened flaked coconut 00:56
14 oz can of sweetened condensed milk 01:35
1 cup of sliced Almonds (use roasted and salted almonds 00:27 | 00:52 | 01:30
2 cups of Semi-sweet chocolate chips 01:25

DIRECTIONS:
Step 1: (Done off camera)
Preheat oven to 325F. Prepare cookie sheets by lining them with parchment paper.

Combine the coconut, sweetened condensed milk, sliced almonds, and chocolate chips in a large mixing bowl. 02:22 (I used my Ankarsrum Stand Mixer)

Scoop the cookie dough into small mounds on the prepared cookie sheets. Wet your hands with water and then shape the mounds into round cookies and slightly flatten the tops of each cookie. I placed a whole Almond on top of each cooky.

Bake at 320F for 13-15 minutes until golden brown around the edges. (OPTIONAL: I used Honey to create a topping on a few cookies. Apply the Honey while the cookies are hot.) Cool the cookies on the baking sheet before serving.
