These amaretti cookies are crispy on the outside and soft and chewy on the inside. Made with unblanched almond flour, these simple cookies are a perfect treat any time of the year.
Prep Time: 10 min | Cook Time: 25 min | Total Time: 35 min | Servings: 16 cookies
INGREDIENTS:
• 2 cups unblanched almond flour (
• 1 cup granulated sugar
• 1/4 tsp salt (
• 2 large egg whites
• 1 tsp lemon juice
• 1/2 tsp almond extract
• 1/4 cup powdered sugar
INSTRUCTIONS:
1. Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
2. In a large bowl, mix together almond flour, sugar, and a pinch of salt. Set it aside.
3. In another large bowl, beat the egg whites until they're foamy. Add lemon juice and almond extract, and keep beating until the mixture forms medium-stiff peaks.
4. Gently stir in the dry ingredients until everything is well mixed.
5. Take scoops of the dough and shape them into small 1-inch balls.
6. Roll these dough balls in powdered sugar until they're well coated, then place them on your prepared baking sheet.
7. Bake in the preheated oven for about 25-30 min or until they have cracked tops and slightly browned bottoms.
8. After baking, let the cookies cool for 5 min on the baking sheet and then transfer them to a wire rack to cool completely. Enjoy!

Ingredients
* 1 1/3 cup (120g) almond flour (‼️NOT PACKED‼️)
* 2 tablespoons (30 ml) maple syrup
* 2 tablespoons (30 ml) coconut oil, melted
* Pinch of salt
NOTE:
1. Please, use the Digital kitchen scale fo the best results!
2. Instead of maple syrup take 2 tbsp sugar/low-carb sugar and 1 tbsp water.
3. Instead of coconut oil take Ghee or yellow part of melted butter. Vegetable oil don't work in this recipe.
4. Don't let the dough chill too long. Coconut oil will solid at room temperature and the dough will be crumbly and will not come together.
5. Don't pack down almond flour!
Instructions
1. Preheat oven to 350F (175C). Line a baking sheet with parchment paper.
2. In a medium bowl, combine all of the ingredients, stirring to combine (be sure to break up any lumps in the flour and/or sugar).
3. Shape dough into about 16 balls. Space balls 2 inches apart on prepared baking sheet. Flatten halfway (e.g., with a fork, cookie stamp, the flat bottom of a measuring cup, or fingertips)
4. Bake in a preheated 350F oven for 12 to 15 minutes until the edges are golden brown and the centers no longer look wet. The cookies will still seem somewhat soft, but that is due to the high amount of fat (almond flour + coconut oil). They will become firm once completely cooled.
5. Remove from oven and cool on sheet for 10 minutes. Transfer to a wire cooling rack and cool completely.
Storage: The cookies are best stored in the refrigerator, in an airtight container, for up to 2 weeks (or the freezer for up to 6 months).

Ingredients
1 & 1/2 Cup Maida or refined flour
1/2 Cup Ghee or Clarified Butter
1/2 cup powdered brown sugar or refined sugar
1/2 Tsp Vanilla Essence
1/4 Tsp baking soda
1/2 Tsp Baking powder
small pinch of salt
2 Tbsp Vanilla custard powder
1/2 cup Almonds
Bake cookies at 180 degrees c for 15 to 20 mins.
Please check after 10 mins as the time taken to bake will depend upon the thickness of the cookies.

►16 Tbsp (1/2 lb) unsalted butter, softened
►½ cup (62 grams) powdered sugar, plus more for rolling cookies

1/2 cup date paste (view “DATES” highlight)
1/4 cup almond butter
1/2 tsp almond extract
½ tsp vanilla extract
1 1/2 cups almond flour
1/2 tsp baking soda
⅛ cup slivered almonds
Generous pinch of sea salt
1/4 cup dried apricots chopped
* For those with diabetic considerations or who want to limit their sugar intake, you should reduce the amount of dates.
-Combine date paste, almond butter, almond extract, and vanilla extract in a mixing bowl. Mix well.
-Add almond flour and baking soda, mix until combined.
-Fold in slivered almonds and dried apricots
-Roll in balls and flatten.
Bake for 10-12 mins at 350F
**For date paste 12 pitted dates ⅔ cup water
