How To make Albondigas Soup

oregano leaves, dried, crumbled

liquid hot pepper seasoning
1/2
cup
long-grain white rice
1
meatballs (recipe follows)
1/2
cup
minced cilantro, fresh (coriander)
1
cilantro sprigs (optional)
1
salt and pepper
Directions:
MEATBALLS: In a large bowl, mix together until well blended 1 pound lean ground beef, 1/3 pound bulk pork sausage, 1/2 cup cornmenal, 1/4 cup milk, 1 egg, 1 small onion, minced, 1 garlic clove, pressed or minced and 1/2 teaspoon crumbled dried basil leaves.
Shape the mixture into about 3/4-inch balls. If making ahead, return the meatballs to bowl, cover, and chill up to 4 hours.
In a 6 to 8 quart pan, combine broth, tomatoes and their liquid, chiles, onion, basil, oregano, and hot pepper seasoning to taste. Bring to a boil over high heat. Add rice, cover and simmer 15 minutes. Add meatballs. Cover and simmer until meatballs are not pink in the center (cut to test), 10 to 15 minutes longer. Stir in the minced cilantro. Laddle into bowls and garnish with cilantro sprigs. Add salt and pepper, to taste.
Makes about 5 quarts, 10 to 12 servings.

ALBONDIGAS: How to Make Traditional Mexican Meatball Soup/Caldo de Albondigas
Albondigas or Caldo de Albondigas is one of the most traditional and delicious Mexican soups. In case you don't know, albondigas means meatballs in Spanish, and so this is a yummy meatball soup that is hearty and packed with wonderful vegetables. Read on for the recipe.
Albondigas
1 1/2 pounds lean ground beef
1/2 cup of uncooked or partially cooked long grain rice (you can also substitute 1/2 cup of raw oats)
1 egg
1 onion, chopped & divided (approx. 1/4 cup for meatballs, remainder for broth)
1 garlic clove, minced
2 roma tomatoes, chopped
3 potatoes, peeled & cut into bite sized cubes
1-2 Mexican squash or zucchini, chopped
1-2 carrots, peeled and chopped
1 stalk of celery, chopped
2 Tbsp. olive oil
6 cups (48oz.) chicken or beef broth
salt to taste (I used 1 tsp. for meatballs, and 1/2 tsp. in broth)
1/2 tsp. crushed pepper
1 tsp. whole cumin seed
Place ground beef in large mixing bowl. Add rice, 1/4 cup chopped onion, salt, pepper, cumin seed, and egg and mix until fully combined. Form meatballs about the size of a golf ball and set aside.
Heat large saucepan over medium high heat. Coat bottom of pan with approx. 2 Tbsp. oil. Once heated, add in remaining chopped onions and sauté until translucent. Add in chopped tomatoes and celery and allow to cook down a few minutes. Add in minced garlic and sauté. Add broth. Stir and bring to a boil. When it boils, carefully add in meatballs and lower heat to a simmer. Meatballs will take a total of 30 minutes to cook. (You will gradually add in other vegetables based on how long they take to cook.) 15 minutes after adding meatballs, add in potatoes and carrots. 7 minutes later, add in squash. Squash will take about 8 minutes to cook, which should bring you right up to 30 minute mark from the time meatballs were put in. Taste broth for salt and add desired amount. Remove from heat and let sit covered 5 minutes more before serving.

ALBONDIGAS INGREDIENTS:
For the meatballs:

Albondigas aka Mexican Meatballs - Delicious, juicy & tender meatball soup!
Albondigas are a classic Mexican meatball served in a caldo, essentially making a meatball soup. I am not at all claiming my recipe to be authentic, lots of popular recipes will add chopped mint or epazote to the albondigas instead of cilantro & not all of them will use chipotle peppers, but chipotle & cilantro are two of my all time favorite ingredients so I had to use them.

Ingredients:
2 lb ground beef
1 white onion
1 bunch cilantro, half chopped, half for blending sauce
6 chipotle peppers in adobo sauce, divided (optional)
½ cup long white rice
1 tsp cumin
1 tsp chili powder
2 tsp oregano, divided
Salt & pepper to taste
2 eggs
4 roma tomato
6 cloves garlic
1 tbsp tomato bouillon
4 cup chicken or beef broth
4 cup water
2 carrots, chopped
4 small potatoes, chopped
2 corn cobs, cut into
2 calabacitas, chopped
Cooked Rice
Tortillas for serving

Albondigas Soup {Easy, Mexican Meatball Soup}
This Albondigas Soup, is a hearty, healthy, Mexican soup made with beef & rice meatballs, potatoes, and veggies cooked in a flavorful tomato broth. It's an easy one-pot meal made on the stove top! But you can also make it in the Instant Pot or Crock Pot...instructions included on recipe card!
Note: For the meatballs I used cilantro, because it's what I always have on hand. But, you can also use fresh mint (or a combo of mint and cilantro) and it's also delicious!

Albondigas is a traditional Mexican meatball soup, served in light or hearty tomato sauce with various vegetables. There are many variations of this recipe, and today I will share my way on how to prepare this delicious soup!

Albondiga Ingredients:
2 Lbs Lean Ground Beef
2 Garlic Cloves
1/4 Onion
1/4 Cup Finely Minced Cilantro
1 Tsp Black Pepper
1 Tsp Salt
1/4 Tsp Cumin
1 Cup Pork Panko or Bread Crumbs
2 Large Eggs
1 Cup White Rice
Sauce Ingredients
12-13 Cups of Water
6-8 Roma Tomatoes ( I used 6 in the video and ended up using 8 )
1 Serrano Pepper (optional)
1 Chile Guajillo
3-4 Chipotle Peppers with 2-3 Tbsp of the Adobo (also optional)
2-3 Garlic Cloves
1/4 Onion
1-1 1/2 Cups of Water, Chicken, or Beef Broth
2-3 tbsp Chicken, Tomato, or Beef Bouillon (I used Chicken)
Handful of Cilantro
Vegetables:
3-4 Carrots
3 Potatoes
2 zucchini
1 Large Chayote Squash
You can also add or remove any other vegetables of your choice!
Ingredients for Rice
2 Cups Long Grain White Rice
1/2 Onion
1-2 Large Garlic Cloves
4 Cups of Water
1-2 Tbsp Tomato Bouillon
Pinch of Cumin
1/3 Tsp Oregano
