How To make After Dinner Mint Cookies
10 oz Mint chocolate wafers
3/4 c Butter; softened
2/3 c Sugar
1 Egg
1/4 ts Salt
1 1/3 c All-purpose flour; unsifted
3/4 c Walnuts; finely chop
Melt 5 oz of the Mint Wafers (Ghiradelli brand is good) in a double boiler, stirring constantly or microwave on medium for about 3 minutes. Set aside. Cream butter with sugar, egg and salt. Mix in melted chocolate. Gradually add flour. Chill dough at least 1 hour. Shape dough into balls, using 1 level Tbsp for each cookie. Roll balls into nuts. Place on greased baking sheets. Flatten slightly with the palm of hand. Bake at 350-F for only 8 minutes. Remove from oven and place Mint Wafer on top of each cookie, pressing slightly. It's finally a cookie recipe and I decided to use up my mint chocolate chips that I bought awhile back before they expired. I used my usual chocolate cookie dough and just add mint chocolate chips and they turned out great! Cookies are one of the simplest desserts to make and I'm going to show you how.
Double Chocolate Mint Cookies
1.5 sticks or 3/4 cup butter
1/2 cup white sugar
1/2 cup brown sugar
2 eggs
1 tsp vanilla extract
1 tsp salt
1 tsp baking soda
1 3/4 cup AP flour
1/4 cup cocoa powder

Ingredients:
1 cup butter
1 cup sugar
1 cup brown sugar
2 eggs
1 teaspoon vanilla
1 teaspoon mint extract
2 1/2 cups flour
3/4 cup cocoa
1 teaspoon baking soda
½ cup mini chocolate chips
½ cup sugar for rolling the dough
Instructions:
Beat butter and sugars together until mixed
Add eggs, and extracts
Mix until fluffy
Add flour, cocoa and baking soda
Stir to combine
Let dough chill in fridge for a minimum of 30 minutes
Roll balls of dough and coat in sugar
Cook at Fahrenheit 350° for 11 minutes
Transfer to a wire rack or paper towel to cool

NO BAKE Chocolate Mint Bars | The Recipe Rebel
These easy Mint Bars are a no bake Christmas treat the whole family will love!

INGREDIENTS:
Base:
1/2 cup butter
1/3 cup cocoa
1/4 cup sugar
1 egg
2 cups graham cracker crumbs
3/4 cup shredded coconut
Filling:
1/4 cup butter
2 cups powdered icing sugar
2-3 tablespoons milk
1 teaspoon mint extract
green food coloring
Ganache
2/3 cup chocolate chips or chopped chocolate
2 tablespoons butter
INSTRUCTIONS:
Line an 8x8 pan with tin foil.
In a large microwave-safe bowl, combine butter, sugar and cocoa and microwave on high for 45 seconds. Stir, and microwave on high another 20-30 seconds if necessary so that all is melted and combined.
Let cool 5 minutes and quickly whisk in egg (mixture will thicken as the egg is incoprorated). Stir in graham crumbs and coconut until combined. Press into prepared pan.
Filling: With an electric mixer, beat butter until smooth. Add powdered sugar and 2 tablespoons milk and beat until smooth, adding a little more milk or sugar to reach desired consistency.
Add mint extract and green food coloring (as desired). Spread over base in pan.
Ganache: In a medium microwave safe bowl, combine chocolate and butter and melt in 20 second intervals on high, stirring each time, until smooth. Pour over filling in pan.
Refrigerate until completely set, at least 2-3 hours, before slicing and serving. Store in the refrigerator or freeze for up to a few months.
