How To make Aceitunas Rellenas Stuffed Olives
Ingredients

ounces
pitted olives, (one can)
3/4
ounces
anchovy fillets, (one can) cut in small pieces
1
can
pimentos, chopped
1
clove
garlic, mashed or pressed
1/3
cup
wine vinegar
1
tablespoon
olive oil
1
oil, from anchovies
1/4
cup
parsley, minced
Directions:
Drain olives and stuff with the anchovy fillets. Combine the other ingredients, except parsley; pour over the olives and marinate over-night.
Mix in parsley half an hour before serving. If the idea of stuffing the olives throws you, don't do it. Simply add the anchovies to the marinade and pour over the olives. These will keep for a week or more if parsley is added just before serving.

INGREDIENTES:
300 g de aceituna gordal sin hueso
Aceite de oliva
Vinagre
Orégano
Para el relleno:
100 gr de queso crema tipo philadelphia
75 gr de pimientos del piquillo asados
50 gr de atún
ELABORACIÓN:
1. Tritura los ingredientes del relleno hasta conseguir una pasta y colócala dentro de una manga pastelera.
2. Rellena las aceitunas con la manga pastelera y sirve aliñado con aceite de oliva, vinagre y orégano.

Goat Cheese - you can also use other cheeses like Ricotta or Mozzarella
I added fresh parsley, slat, pepper and garlic powder to the goat cheese I used....About 1/2 tsp each to 4oz of Goat cheese
Egg
Flour
Bread Crumbs

Fried Olives Stuffed with Gorgonzola Cheese - Recipe and How To

This snack was inspired by the regional dish olive ascolane from the Le Marche, Italy. Instead of the traditional meat filling I went with cheese. The castelvetrano olives have a mild buttery flavor and a slight sweetness that contrasts wonderfully with that sharp bite of the gorgonzola filling. The perfect blue cheese stuffed fried olive.
FRIED OLIVES STUFFED W/ GORGONZOLA (serves 2 as a snack)
castelvetrano olives, pitted 4 oz.
gorgonzola dolce cheese 4 oz. (you'll have extra)
all-purpose flour 1 cup
eggs 3 or 4 each
panko breadcrumbs 2 cups
peanut oil for frying 2.5 quarts (you can strain and reuse it!)

Stuffed olives: the traditional Italian recipe for a tasty appetizer!
You won't be able to stop at one!INGREDIENTS
200g beef; ½ onion, chopped; 1 celery stalk, chopped; 80g parmesan; 30g breadcrumbs; 120ml chicken stock; Olives;
Flour, breadcrumbs, eggs.
METHOD
Cut the pit out from the olives as shown on the video.
Heat some olive oil over medium heat and saute onions and celery. Add sliced beef and cook for 5 minutes, then pour in some stock and cook down for 10 minutes more.
Blend beef adding parmesan and breadcrumbs until smooth.
Fill each olive with beef mixture, then dredge in flour, cover in egg and breadcrumbs.
Fry until golden and serve right away.
