How To make ARMADILLO EGGS
Ingredients
2
pound
monterey jack cheese
2
pound
sharp cheddar cheese
2
pound
hot pork sausage
1/2
cup
bisquick mix
1
each
egg
1
pk
pork flavor shake 'n bake
20
each
whole jalapeno peppers
Directions:
Slice peppers in half lengthwise and scrape out all the seeds (wear gloves). Try to keep both halves near each other as you have to put them back together later.
Mix bisquick, raw sausage & cheddar cheese. Stuff each pepper with Monterey Jack cheese and put the halves back together. Grab a handful of bisquick mixture and mold around pepper in shape of elongated egg. Use enough to cover pepper well.
Dip armadillo egg in beaten egg and roll in Shake 'n Bake. Bake on broiler pan (can use cookie sheet) at 350 degrees for 25 minutes or until crisp.

Full Recipe: This Armadillo Eggs recipe is a cross between 3 recipes I previously posted; my Jalapeno Poppers, Scotch Eggs and my Cheese Bombers. In fact, these are a lot like Potato bombs too. But, basically, you end up with a jalapeno popper that's wrapped in sausage, bacon and baked to perfection. This recipe is fun and it can be baked or grilled and served as an appetizer, side dish or even as the main course.

ARMADILLO EGGS | Super Bowl Favorite | Better than stuffed jalapeno poppers ❤
Super Bowl Sunday or Any Day!! these super delicious ARMADILLO EGGS will become your favorite too once you taste them, these are so easy and you can get as creative as you want with the filling and dipping sauce. My Ron absolutely loves these, they can easily become a meal, I side them with an assortment of chips, cut up veggies or a delicious salad, and don't forget your favorite beverage! I have created the perfect simple recipe for these out of this world Armadillo Eggs.
INGREDIENTS----------------
6 Large Jalapeños (seeds and membranes removed)
4 oz. cream cheese (softened)
1 finely chopped green onion
1/3 C. finely grated Colby jack cheese
1/4 tsp garlic powder
6 slices thin cut bacon (as needed)
1 lb. Jimmy Dean sausage (regular)
DIPPING SAUCE---------------------------
1 C. ketchup
1/2 tsp dry mustard OR regular yellow mustard (forgot to show)
1/4 tsp garlic powder
3 Tbsp light brown sugar
1 tsp Worcestershire sauce
1/2 tsp smoked paprika
● TOOTHPICS for holding bacon (discard before eating)

Armadillo Eggs - Stuffed Jalapenos Wrapped in Sausage and Bacon
Armadillo Eggs are a fun and inventive appetizer with a creative name. I imagine they were invented years ago when someone like me, a crazy jalapeno popper lover, decided that jalapeno poppers stuffed with cream cheese just weren't enough. They probably stood there, contemplating the wonderfully oozing popper, and thought, You know? I'd bet this would taste even BETTER if I wrapped it in meat! Cheese stuffed jalapeno peppers, wraps them in hot Italian sausage and bacon, then grilled. Truly a show stopper party dish.
