Ingredients 2 pound monterey jack cheese 2 pound sharp cheddar cheese 2 pound hot pork sausage 1/2 cup bisquick mix 1 each egg 1 pk pork flavor shake 'n bake 20 each whole jalapeno peppers
Directions: Slice peppers in half lengthwise and scrape out all the seeds (wear gloves). Try to keep both halves near each other as you have to put them back together later. Mix bisquick, raw sausage & cheddar cheese. Stuff each pepper with Monterey Jack cheese and put the halves back together. Grab a handful of bisquick mixture and mold around pepper in shape of elongated egg. Use enough to cover pepper well. Dip armadillo egg in beaten egg and roll in Shake 'n Bake. Bake on broiler pan (can use cookie sheet) at 350 degrees for 25 minutes or until crisp.

You will need 5-6 jalapeno peppers @.24 1 block of cream cheese @$1.50 1-2 tubes of breakfast sausage @$3.00 1-2 can of biscuits @$1.50 2 cups of oil @.40
Optional Cayenne pepper, red pepper flakes, chili powder @.15

Armadillo Eggs are a fun and inventive appetizer with a creative name. I imagine they were invented years ago when someone like me, a crazy jalapeno popper lover, decided that jalapeno poppers stuffed with cream cheese just weren't enough. They probably stood there, contemplating the wonderfully oozing popper, and thought, You know? I'd bet this would taste even BETTER if I wrapped it in meat! Cheese stuffed jalapeno peppers, wraps them in hot Italian sausage and bacon, then grilled. Truly a show stopper party dish.
