1-2-3-4 Cake Recipe
The 1-2-3-4 Cake is a Southern classic, legendary for its easy-to-remember ratios. 1, 2, 3, and 4 refer to one cup of butter, two cups of sugar, three cups of flour, and four eggs, respectively, and are a handy tool for the baker when gathering the ingredients. The recipe also includes baking powder, milk, and vanilla.
Ingredients
1 cup (2 sticks) unsalted butter, melted
2 cups granulated sugar
3 cups all-purpose flour
4 large eggs
1 tablespoon pure vanilla extract
1 tablespoon baking powder
1 cup milk
Directions:
Preheat oven to 350° F.
Butter and flour 2 8-inch metal cake pans or 1 9x13-inch pan.
Whisk dry ingredients (including sugar) together in one bowl and wet ingredients in another.
Stir together just until the flour disappears and the batter is thick like a milkshake.
Pour batter into prepared pan(s).
Bake until the cake(s) are golden on top and a toothpick inserted into the center tests clean, about 40 minutes.
Transfer cake(s) to a wire rack to cool 10 minutes; turn upside down onto a wire rack and let rest until cooled completely. When the cakes are cool to the touch, cover with frosting.
*Stir ½ cup rainbow sprinkles into the batter for even more fun!
Simplest Frosting Recipe
Ingredients:
• 1 (1-pound) box powdered sugar
• 1 cup (2 sticks) butter, at room temperature
Beat butter with an electric mixer until light and fluffy, then add half the sugar.
Beat until that sugar disappears, then stop and add the rest.
Beat until frosting is bright white and fluffy, like a cloud.
Flavor with vanilla extract, jam, or unsweetened cocoa. Makes enough for 1 (8-inch) layer cake (with a few sneaky spoonful for the bakers).
