In a greased and floured 9x13-inch pan, bake at 350 degrees until done. FROSTING: Mix all together except coconut. Cook until it thickens. Remove from heat and beat well. Add coconut and beat until thick enough to spread on cake.

Seven Up Pound Cake
2 1/2 Cups Sugar 3 Sticks Unsalted or SaButter (Room Temp) 5 Eggs (Room Temp) 2 Tablespoons Lemon Extract 3 Cups All Purpose or Cake Flour Pinch of Salt 1 Cup 7 Up Soda
Preheat Oven @325 Degrees Bake @325 degrees for 1 hour then check with a toothpick.
ICING 2 Cups Powdered Sugar 2 Tablespoons Lemon juice 1 Teaspoon Vanilla Extract 1/4 Cup Seven Up Soda

Easy Fluffy & Light 7-Up Poundcake // Perfect for ANY Occasion
Hey y’all and welcome back!
Today, we’re making a super fluffy and light, 7 up poundcake. This cake is super easy to make, you just have to have a little bit of patience :). This cake is perfect with or without icing.

CAKE: 1 1/2 c unsalted butter @ room temperature 5 eggs @ room temperature 1 c 7-up soda @ room temperature 3 c granulated sugar 3 c cake flour (I love Swan’s cake flour) 1 tbsp lemon extract 1 tsp vanilla extract
ICING: 1 c powder sugar 2 tbsp 7-up soda (you can add more 1-2 more tbsp to water it down, if you’d like)
***Make sure you let your cake cool in pan for 10-15 minutes before you flip it…if the cake is too warm, it will break as soon as you flip it. Also make sure that you don’t leave it in the pan too long, or it will stick to pan.
Don’t open your oven door too soon or move your cake while it’s in the oven…it will likely “fall”
