Learn how to make this scrumptious cake without dairy or eggs in just 6 minutes!
Ingredients
Cake Ingredients
1 ½ cups unbleached white flour
⅓ cup unsweetened cocoa powder
1 teaspoon baking soda
½ teaspoon salt
1 cup sugar
½ cup vegetable oil
1 cup cold water or coffee
2 teaspoons pure vanilla extract
2 tablespoons cider vinegar
Chocolate Glaze
½ pound semi-sweet vegan chocolate
¾ cup hot water
½ teaspoon pure vanilla extract
Instructions
Equipment: 9-inch round or 8-inch square cake pan, 2-cup measuring cup, double boiler
Preheat the oven to 375º.
Sift together the flour, cocoa, soda, salt, and sugar directly into the cake pan.
In the measuring cup, measure and mix together the oil, cold water or coffee, and vanilla.
Pour the liquid ingredients into the baking pan and mix the batter with a fork or a small whisk. When the batter is smooth, add the vinegar and stir quickly.
There will be pale swirls in the batter as the baking soda and vinegar react. Stir just until the vinegar is evenly distributed throughout the batter.
Bake for 25 to 30 minutes and set aside to cool.
To make the optional glaze, melt the chocolate in a double boiler, microwave oven, or reset the oven to 300º and melt the chocolate in the oven for about 15 minutes in a small ovenproof bowl or heavy skillet.
Stir the hot water and vanilla into the melted chocolate until smooth.
Spoon the glaze over the cooled cake.
Refrigerate the glazed cake for at least 30 minutes before serving.

6 Minute Microwave Chocolate Cake
I’ve been making this recipe for the past 23 years and it’s a winner each and every time. It is fantastic because it’s so quick and easy to whip up, it bakes for literally 6 minutes in the microwave oven, and I usually have all the ingredients required for this recipe handy. This cake turns out so moist and delicious that it doesn’t last in our home! Decorate with chocolate icing, and cream and berries. So yum!
You will need:
3 TBS cocoa powder
250ml hot water
5ml vanilla essence
2 large eggs
1/4 cup sunflower oil
1 cup flour
1 cup castor sugar
2ml salt
20ml baking powder
Sift cocoa powder into a bowl, carefully add the hot water and vanilla essence, and mix well.
Add the eggs, mix well.
Add the oil, mix well.
Sift in the dry ingredients, beat together well with a whisk.
Pour into a greased microwaveable cake dish.
Microwave on high for 6 minutes.
Remove from the microwave, allow to cool, and decorate. It doesn’t get easier than that!

Ingredients:
????1+1/2 tbsp water
????1/2 tsp coffee powder
????1+1/2 tbsp cocoa powder
????3 tbsp sugar
????1+1/2 tbsp oil
????2 tbsp curd
????3 tbsp maida
????1/8 tsp baking powder
????1/8 tsp baking soda
????Pecan for topping
Chocolate Glaze
????1/4 cup milk chocolate chips
????1 tbsp oil
Method:
1. In a bowl add hot water, coffee powder and cocoa powder and mix them together.
2. Into this add sugar, oil and curd and mix them in.
3. Sift in the all purpose flour, baking powder and baking soda and combine it with wet ingredients gently. Don’t overmix at this stage.
4. Grease the Stahl Mikro saucepan with Vegetable oil and pour the prepared batter in it.
5. Switch on your induction and put it on lowest heat possible. Put your stahl mikro pan on the induction and cover it with a lid/plate. Let it bake for 20-25 minutes till a skewer comes clean.
6. In case, if you dont have induction and wish to use a regular stove. Dont cook it on the direct flame. Put a saucepan on a bigger pan and cook it on the lowest flame.
7. For the glaze- Melt the chocolate and combine oil in it. Your glaze is ready.
8. Wait for the cake to come at the room temperature and then decorate it with the chocolate glaze and a pecan nut
