No-Knead Cherry & Chocolate Brioche Recipe
Brioche is one of my favourite doughs to work with. It is extremely simple to make and it’s super versatile and that is why I keep coming back to it. The brioche playlist on my channel is full of different recipes savoury and sweet. Sweet ones are usually the more popular ones, so I decided to make this cherry and chocolate filled loaf.
I saw a similar recipe on the King Arthur Baking website and thought I could adapt it to my style and turn it into a nice sliceable loaf. Once again, my USA Pan Pullman tin came in handy. It’s been used quite a lot in the last few months and for good reason. It is one of my favourite pieces of baking equipment. You can use a regular 2lb (900g) tin for this recipe.

How to Make the Perfect Chocolate Cake
In this video I show my favorite way to make chocolate cake! Please let me know in the comments below what you would like to see me make next!
The recipe: (This also works great for cupcakes. Reduce baking time to about 14-18 minutes)
1/2 cup unsalted butter (113 grams)
1/2 cup vegetable or canola oil (4 oz or 120 mL)
1 1/2 cups + 2 Tablespoons granulated sugar (330 g)
3 large eggs
2 1/2 cups AP flour (300 g)
1/2 cup cocoa powder (42 g)
1 1/2 teaspoons baking soda (7.5 g)
1 teaspoon salt (5 g)
1/2 cup sour cream (4 oz)
1 cup buttermilk (8 oz or 240 mL)
2 teaspoons vanilla (10 g/mL)
*may omit sour cream and use 1 1/2 cups buttermilk*
*may substitute milk for buttermilk* (original recipe works best, though ????)

3-Ingredient Chocolate Cake Recipe
This 3-ingredient chocolate cake also known as lock down cake has been viral all over the internet in the last few months. I decided to give it a try and I was surprised how easy this cake and how good it is. All you need is some cookies/biscuits, baking powder and milk. The result is soft, fluffy and delicious cake. If you are making this cake with Oreo cookies, the cake will taste like Oreo.

Ingredients:
For the cake:
350g (12.35oz) Oreo cookies oy any other cookies/biscuits (or combination of cookies)
2½ teaspoons Baking powder
1½ cups (360ml) Milk
For dark chocolate ganache:
100g Dark chocolate
1/2 cup (120ml) Heavy cream
For milk chocolate ganache:
150g Milk chocolate
1/2 cup (120ml) Heavy cream
Directions:
1. Preheat oven to 340F (170C). Grease 7-inch (18cm) round cake pan with butter, line the bottom with parchment paper. Grease the parchment as well. Set aside.
2. In a food processor or a Ziploc bag, crush the cookies into fine crumbs.
3. Transfer to a large bowl, add baking powder, milk and mix until combined.
4. Pour into prepared pan and bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
5. Release from the pan, let cool and frost the cake. Decorate if desired.
Notes:
• You can use Oreo cookies, chocolate cookies, vanilla cookies or any other regular cookies.
• Chocolate ganache is optional; you can skip it or use your favourite frosting.
•It is important to crush the cookies into fine crumbs, is you crushing by hand, make sure they are not big lumps.

ONE MINUTE CHOCOLATE FROSTING RECIPE
Ingredients
2 Tbsp / 30g Butter
1 Cup / 125g Powdered Sugar / Icing Sugar
2 Tbsp / 12g Cocoa Powder
1/2 tsp Salt
1-2 Tbsp Hot Water
Instructions
Bring some water to the boil in kettle or in a small saucepan over high heat. Once it is boiling set aside.
In a medium sized mixing bowl add the butter, powdered sugar, cocoa powder and salt.
Pour over the hot water and use a whisk to combine the ingredients together until whipped and smooth.
Add more water if needed for a thinner consistency.
Notes
Use the Chocolate Frosting immediately as it will start to thicken as it sits.
More hot water can be added to thin out the consistency if it has set.
The recipe can easily be doubled or tripped to make a larger amount.

For batter:
Sugar 2 cups
Flour 1 3/4 cups
Cocoa 3/4 cup
Baking Soda 1 1/2 tsp
Baking Powder 1 1/2 tsp
Salt 1 tsp
2 eggs
Milk 1 cup
Oil 1/2 cup
Vanilla Extract 2 tsp
Boiling Water 1 cup
For icing:
Butter 1 cup
Cocoa 1 1/2 cup
Powdered Sugar 2 cups
Milk 2/3 cup
Vanilla Extract 1 tsp
STEP-BY-STEP INSTRUCTIONS:
Preheat oven to 360F / 180C. Grase and flour two 9-in baking pans. Set aside.
In the large bowl of a standing mixer, stir together flour, sugar, cocoa, baking soda, baking powder and salt.
Add eggs, milk, vegetable oil and vanilla extract. Beat until smooth about 3 minutes.
Stir in boiling water. You can use rubber spatula to stir. Batter will be very runny.
Pour batter evenly between the two pans and bake on middle rack of oven for about 30-35 minutes, until toothpick inserted in centre comes out clean with just a few moist crumbs attached.
Let it cool about 10 minutes before removing from pans. Than cool completely.
In the meantime, prepare a chocolate buttercream frosting. Use a standing mixer to beat the butter until fluffy.
Finely add in cocoa, powdered sugar, milk and vanilla extract. Mix until smooth.
Cut each cake horizontally.
Smear evenly 2-3 heaped tbsp buttercream frosting over the first layer of cake, cover with second layer and buttercream frosting and continue that process with remaining layers of cake and buttercream frosting. Spread buttercream frosting evenly with a spatula all over the cake.

PRO TIP
You can also line baking pans with parchment paper circles.
It's good idea to substitute water for 1 cup of hot coffee!
