The Perfect Whole Wheat Sourdough Bread | Full Masterclass
This is how you make the perfect whole wheat sourdough bread every time. The recipe contains all the important explanations that allow you to master the recipe at home every time. The bread features incredible taste, tremendous oven spring and an amazing crumb - all with 100% whole wheat, completely made by hand.
I'd say it all boils down to 3 things:
- Choosing a good whole wheat flour
- Building a lot of dough strength (and skipping the autolysis)
- Fermenting on point

- 400 grams of whole wheat flour
- 340 grams of water (85%)
- 80 grams of starter (20%)
- 8 grams of salt (2%)

Whole Wheat sourdough bread|Open crumb|100% Whole Wheat
The perfect and the healthiest bread you can get from whole wheat flour.
Ingredients for 2 loaves (banneton 21cm)
168g whloe wheat starter
800g whole wheat flour
40g multi grain or replace with wholewheat flour
750g water
17g salt
1tbsp honey(optional)
Total hydration 90%
House temp 27°C-28°C
Bulk fermentation 6h30min
Starter kept at 25°C (refresh a couple times before using)
*note1: Please don't stress about the float test. But If you want to do it, better to do before you add to the dough. Because I forgot about it and I still wanted to show you, so I did it after. I know It was still nice and bubbly, since I poured it out gently. Those bubbles that makes it float. ????
*note2: The dough is pretty cold and a little stiff. I'd recommend using a stand mixer or using gloves if you're not used to cold dough.

100% Whole Wheat Bread /No Sugar, No Butter, No Kneading /Super Easy and Healthy
These healthy 100% whole wheat bread are made without added sugar or butter, and they can be dinner rolls and sandwich bread. Without kneading, this recipe is very easy to follow. The bread features surprisingly moist and soft.
100% Whole Wheat Bread
(8 servings)
Ingredients:
1/2 cup (120ml) warm milk
1+1/2 tsps (5g) instant yeast
1 + 2/3 cups (250g) whole wheat flour
1/4 tsp (2g) salt
1 egg
2 Tbsps (30g) grapeseed oil
(350F/180C) Bake 15 minutes
Method:
1. Preheat oven to 350F/180C
2. In a bowl, add warm milk and instant yeast, and stir together. Then rest 5 minutes
3. In a separate bowl, add flour, salt, and stir together.
4. Add the egg, grape seed oil and yeast mixture to the flour mixture and mix together. Use the spatula to mix until it roughly becomes a dough
5. Cover and proof the dough for one hour, or until the dough doubled in size
6. After one hour, transfer the dough to a work surface. Gently deflate the dough.
7. Fold the dough couple times, and then shape the dough into a rectangle or round shape
8. Divide the dough into 8 pieces
9. Shape each piece into a small ball
10. Place dough balls in a 9'' round cake pan
11. Second proof the dough for 45 minutes
12 . After 45 minutes, transfer the bread to the preheated oven, (350F/180C), bake for 15 minutes; or until golden brown on top.
13. Remove the bread from the oven, and after 2 or 3 minutes, carefully transfer them to a rack.
14. Serve warm, or at room temperature.

* warm milk approximately 105 F/40 C

⁉️For some may find the dough too wet or sticky but if it’s manageable to knead then it’s not necessary to add flour. The longer it’s being kneaded will become smooth & elastic.
⁉️Every flour may behave differently when absorbing liquid, so in case the recipe's measurement might not be compatible with the quality of your wheat flour or if your dough mixture turned out too wet & seems impossible to knead, then it’s a sign to add flour.
✔️Ingredients
1 cup lukewarm water [240 ml]
2 & 1/2 tbsp honey [38 ml]
1 & 1/2 tsp instant yeast [5 grams]
1/4 cup vegetable oil [60 ml]
1/4 tsp salt
2 & 1/2 cups whole wheat flour [300 to 340 grams] (weight may vary, add up if it needs it coz every flour absorbs liquid differently)
