Sweet Woodruff Jelly
Woodruff (Galium odoratum) is usually found in deciduous forests in May. However, it also grows in my garden in a shady place. The herb gives off a sweet and spicy smell. Its aroma becomes even more intense when the leaves are wilted or dried. Woodruff is used as a medicinal and seasoning plant, for example, for woodruff punch or woodruff jelly. It can cause mild headaches if enjoyed in too high a concentration.

Ingredients:
50g woodruff
600ml white wine
150g sugar
2 tsp. agar agar
Preparation:
1. Dry the woodruff so that the stems are withered.
2. Put the herb in a carafe and pour water or white wine over it.
3. After a few hours, pour off the liquid and put it into a pot.
4. Mix sugar and agar agar and stir both in the cold liquid.
5. Then bring everything to a boil and boil for about 4 minutes.
6. Allow the liquid to cool briefly and pour into molds. Immediately after cooling, the jelly will be firm.

While shooting at Woodruff’s Café & Pie Shop in rural Virginia, owner Angle Woodruff Scott mentioned that she and her family and the staff sometimes sing for their customers. At a slow moment in mid-morning, we asked if they’d sing a song for us, and they performed a family favorite called “I’ll Search Heaven For You.” We included one verse of the song in the program, but the whole song is definitely worth hearing.
Bakeries are popular places. They smell great. They are full of wonderful things to eat, from crusty breads to gooey and sweet treats. And they often become neighborhood meeting places, where bakers work hard and where people often leave with good feelings as well as fresh baked goods. Sweet Woodruff Punch without alcohol - sweet woodruff recipes
Recipe for 1 liter

Ingredients:
500ml Apple juice (500g)
500ml sparkling water (500g)
25 sweet woodruff blossoms (20g)
½ lemon (juice) (30g)
Ice cubes
Preparation method:
- Mix the sweet woodruff blossoms with the apple juice and cover it, leave it to rest for 24h in the fridge.
- Remove the blossoms from the bowl with a sieve.
- Add the lemon juice, ice cubes and at the end the sparkling water, serve immediately.
You can add some small cubes of season fruits to colour up your punch.
Preparation time: 5min
Start to Finish: 24h 5min
Shelf life:
The punch tastes best right away, you can keep the punch in the fridge for about 2-3 days (but the sparkling will be gone soon).
