Crispy Chicken Chilli Wontons Ingredients -
For the Filling -
200 gms Chicken Thigh (deskinned, deboned & cut into cubes)
1/4 cup Onion (diced)
1 tbsp Spring Onion Greens (chopped)
1 tbsp White Onions (chopped)
1 tbsp Capsicum (chopped)
2 tsp Dark Soy Sauce
1 tbsp Ginger, Garlic & Green Chillies (crushed)
1/2 tbsp Black Pepper (crushed)
Salt (as required)
2 tsp Oil
For the Glue -
2 tbsp Refined Flour

About Wontons
A wonton (traditional Chinese: 餛飩; simplified Chinese: 馄饨; pinyin: húntun) is a type of Chinese dumpling commonly found across regional styles of Chinese cuisine. It is also spelled wantan or wuntun in transliteration from Cantonese 雲吞 / 云吞 (wan4 tan1) and wenden from Shanghainese 餛飩 / 馄饨 (hhun den). There are many different styles of wonton served throughout China, though most foreigners are only familiar with Cantonese wontons because of the predominance of Cantonese restaurants overseas.
Wontons are made by spreading a square wrapper (a dough skin made of flour, egg, water, and salt) flat in the palm of one's hand, placing a small amount of filling in the center and sealing the wonton into the desired shape by compressing the wrapper's edges together with the fingers. Wontons are commonly boiled and served in soup or sometimes deep-fried. There are several common regional variations of shape.
The most versatile shape is a simple right triangle, made by folding the square wrapper in half by pulling together two diagonally opposite corners. Its flat profile allows it to be pan-fried like a guotie (pot sticker) in addition to being boiled or deep-fried.
Each region of China has its own variations of wonton; examples include Beijing, Sichuan, Hubei, Jiangnan, Jiangxi, Guangdong (Canton), Fujian, etc. Dumplings and wontons from the 7th and 8th centuries CE were found in Turpan. Originating from China, wontons have also become popular in other East and Southeast Asian cuisines.

INGREDIENTS (Makes about 50-60 wontons)
300 grams 10.6 oz of ground chicken
200 grams 7 oz of peeled shrimp
100 grams 3.5 oz of garlic chives (jiu cai) or scallion
1.3 big size onion diced
18 cloves of garlic
2 inches of ginger thinly.
3 scallions, cut into 2 inches pieces
1.5 cup of vegetable oil (I am using corn oil) (Amazon Link -

1.5 tbsp of soy sauce (Amazon Link -

1 pack of wonton wrapper 50-55
8 cups (1.9 liters) of chicken stock or water
1 tbsp of salt to season the broth
1/2 cup of cold water to drop the temperature
Baby bok choy or other green vegetables
Diced scallion as garnish
Pickled long beans or other pickles as toppings optional
INSTRUCTIONS
Soak 1 cinnamon stick, 2 bay leaves, 1 star anise, 2 pieces of clove, and 3 pieces of dried red chilies with some hot water for 20 minutes. then drain thoroughly.
Dice 1 and 1/3 of a big purple onion.
Finely chop 18 cloves of garlic. Optionally, put the garlic in a sieve and rinse it with running water to remove the mercaptans. Dried it with paper towels.
Cut 3 scallions into 2 inches long pieces.
Slice 2 inches of ginger finely.
Dice 100 grams of garlic chive. You can use other types of vegetables if you want. Such as mushrooms, carrots, cabbage, scallion...
Pour 1.5 cups of oil into the wok. Add the diced onion. Simmer it on medium-low heat for 5 minutes. Add in the garlic, ginger slices, scallion strips, and the soaked but well-drained spices. Continue to simmer everything on medium-low heat for another 20 - 30 minutes or until the onion and garlic are lightly golden. Make sure to stir constantly the whole time.
Drain out the oil. Store the oil in a sealable container. It will stay good for 2 months in the fridge.
Remove all the spices, scallions, and ginger slices. save the fried onion and garlic for the filling.
Roughly diced 200 grams of peeled and deveined shrimp. Add it to a big mixing bowl along with 300 grams of ground chicken thigh.
Season with 1.5 tbsp of soy sauce, 1.5 tbsp of fish sauce, 1 tbsp of oyster sauce, 1 tbsp of chinese cooking wine, and some white pepper to taste
Stir the protein within 1 direction for 5 minutes to develop the texture. Add the fried aromatics, the diced garlic chives. Keep stirring the filling until everything is well combined.
Put some filling in the middle of the wonton wrapper. Gather the edge together and pinch to close it. This recipe is enough to make 50-60 pieces of the wonton.
Bing 8 cups of chicken stock to a boil. Season it with some salt by taste. Add the wonton. Cook over medium-low heat until the wonton float to the top of the water and the pot should come back to a simmer. Add 1/2 cup of cold water to drop the temperature. Wait for the pot to come back to a simmer again. The total cooking time will take about 8-10 minutes. Optionally, throw in some baby bok choy and you are done.
Drizzle in 1-2 tbsp of the aromatic oil. The heat from the soup will reactivate the fragrance. Sprinkle some diced scallion as a garnish. Serve with Pickled long beans or other pickles.

INGREDIENTS: 1 lb. ground pork; 3 oz. fresh shiitake mushrooms, stemmed and minced; 1.5 oz. tea-flavored tofu, minced;1/2 oz. scallions, white and green parts, minced; 1 oz. chives, sliced; 2 (1/8) slices ginger, minced; 2 T soy sauce; 1 T sugar; 1 extra large egg; 2 T tapioca, sweet potato or corn starch; 1 tsp. Shaoxing cooking wine;1/2 tsp. sesame oil. RECIPE: Combine all ingredients and stir vigorously.
I'd like to show you how to make filling for won-tons and dumplings.
First, we're going to start with some ground pork. Pork is by far the Chinese meat of choice. I like it because it's not too intense in flavor but it's still got a nice meatiness.
Next, I'm going to add some sugar and some tapioca starch. Tapioca starch is used a lot in Chinese cooking. It's what makes that nice, clear, thick sauce you see a lot but also it helps keep meat pretty juicy. It also has a nice coat on it when you fry it or sear it. But here we're just going to incorporate that into the pork to keep it nice and moist as we fold it into won-tons and dumplings.
Next, we're going to add some tea flavored tofu. You'll find this in a lot of Chinese grocery markets. It's this interesting savory, aromatic tofu. I love to add it. I think it pairs really well with chives and scallions which we'll add in just a moment here.
We're going to add here some ginger, scallions and chives. I like having the dual onion-y taste in this. It adds a really beautiful color.
Then we got salt and some fresh shitake. I like using fresh shitake. It has a nicer texture but if you're really in a pinch you can rehydrate the shitake and chop it up and put it in filling.
Finally we got some soy sauce, a little sesame oil and shaoxing cooking wine which is kind of like dry sherry. You can also use it for deglazing a pan. A lot of times what you would use, I would say, dry wine for. You're going to mix this all together. As you can see, this is still not totally coming together which is why I usually add an egg as a nice binder.
Now, just stir that in there and if you really want to mix it well, which you do, since you want every little bite of won-ton and dumpling to be flavorful, you can use your hands.
It should have a nice squishy consistency. It shouldn't be running too much but it should all stick together so you can form a little ball with it at the end.
That is how you make won-ton and dumpling filling.
