Red Wine and Cheese Challah Bread with Purple Sweet Potato Flour, Truffle Pecorino Cheese, & Walnuts

This challah-inspired six-braid loaf is made with two different types of dough: (1) The first purple dough includes some purple sweet potato flour and is made with red wine instead of water for the liquid component. (2) The second dough is made with some added truffle pecorino cheese, microplaned walnuts, and extra honey.
When the strands are braided together, it provides some really beautiful color contrast. And the bread comes out tasting absolutely incredible. I did not notice as much of the red wine flavor as I was expecting, but it was a really fun idea. Next time I will experiment with even more cheese, using a nice aged Manchego cheese to better match the Spanish wine, using 100g instead of 20g.

Brazilian CHEESY BREAD Recipe - aka Pão De Queijo - Easy Cheese Bread
From my hometown in Brazil, Uberaba, Minas Gerais I bring to you guys the world famous Pão De Queijo, aka Brazilian Cheese Bread. This is made in every Brazilian Churrascaria. It is easy and simple to make. You can also freeze them, it will last up to 6 months in the freezer is really an amazing recipe.
HOW TO BAKE BRAZILIAN CHEESE BREAD
I cooked it for 30mins @ (325°F / 163°C)
Or until lightly Golden Brown
* INGREDIENTS * I used for cheese bread recipe.
5 Cups of Tapioca Starch:
2 Eggs
2 cups of Whole Milk
1/2 cup Vegetable Oil
2 tbsp Fine Salt (I like mine with 2 tbsp fine salt if you like less salty use 1 tbsp) Be exact on your tbsp use a measuring method don't guess with salt!
2 cups Mozzarella Cheese
1 cups Parmesan Cheese (4oz)

* PS. First Watch the video above. On video I showed only 3 cups of Tapioca Starch but I used 5, you can use 4 and add all the wet stuff, mix everything and add more accordingly. If you put less tapioca starch it will be a moist and gooey inside. If you add more it will be dryer and more towards bread style. I recommend starting with 5 cups and adjust to your liking.

Megrelian Double Cheese Bread - Megruli Khachapuri
Learn how to make double cheese khachapuri. Eat as the kings did. This large round khachapuri comes from Samegrelo region in Western Georgia, which is the homeland of sulguni cheese. Typical Megruli khachapuri is 12 inches in diameter and is topped with sulguni cheese as well as being filled with it. Some cooks will slice the cheese for the topping rather than grate it. The cheese melting and stretching inside and outside the crust creates an unforgettable taste.
Megrelians often combine yeast and yogurt for the dough of this khachapuri, and this is the recipe I offer. If the dough starts to tear, simply mend it by dusting with some flour. Wrap the leftovers in an airtight bag or container and refrigerate for use the next day.
Ingredients for Megrelian Double Cheese Bread (Megruli Khachapuri)
Makes 2 (12-inch) khachapuri
Serves 8 to 10
For the filling
3 pounds grated Sulguni cheese or 2 1/2 pounds low-moisture mozzarella and 1/2 pound crumbled feta
1 large egg, beaten
Make the filling:
1. Reserve 1 pound Sulguni or mozzarella cheese to top the khachapuri.
2. Mix the remaining cheese with the egg.
For Samepo khachapuri additional ½ pound mozzarella sliced into ¼ inch slices
For the dough
1 ounce fresh yeast or 1 packet active dry yeast
1/2 cup warm water or milk
1 teaspoon sugar
4 cups all-purpose flour, plus more for kneading and dusting
1 teaspoon fine sea salt
1 cup plain natural Greek yogurt
1 large egg, beaten
4 tablespoons olive oil
1 large egg yolk beaten with 1 teaspoon water to make an egg wash
