How To make White Bean and Potato Pie
2 cups dried navy beans
5 cups water
4 garlic cloves
peeled
9 tablespoons olive oil
2 1/2 teaspoons salt
2 medium onions :
peeled and thinly
sliced 1/2 pound russet potatoes peeled and diced
1 tablespoon tomato paste
1/4 teaspoon red pepper flakes
Freshly ground black pepper 1 tablespoon fine dry bread crumbs
1/2 cup freshly grated Parmesan cheese
3 eggs :
lightly beaten
1 tablespoon minced parsley
Place the beans in a stockpot with the water, garlic cloves, 2 tablespoons of the oil, and 1 teaspoon of the salt. Bring to a boil and simmer, uncovered, for 1 hour, or until the water has been absorbed. Transfer the beans and garlic to the bowl or a food processor fitted with the metal blade and puree them.
While the beans are simmering, heat 6 tablespoons of the olive oil in a medium skillet. Add the onions and potatoes and cook over medium-low heat for 12 to 15 minutes, until the onions are golden and the potato tender. Stir in the tomato paste and pepper flakes. Season with black pepper and 1 teaspoon of the salt.
Lightly grease a 10-inch pie plate. Sprinkle it with bread crumbs. Preheat the oven to 350 degrees F.
Transfer the pureed beans to a bowl. Stir in the Parmesan cheese, the remaining 1/2 teaspoon salt, and the remaining 1 tablespoon of olive oil. Beat in the eggs. Scrape the mixture into the pie plate, smoothing the surface with a spatula.
Cover the beans with the onion and potato mixture, spreading it evenly over the top. Bake the pie for 35 to 40 minutes, until puffed and golden. Remove from the oven and sprinkle with the minced parsley. Serve warm.

Sweet potato pie recipe
3 large sweet potatoes
2 large eggs, beaten

1 cup brown sugar
1 stick of unsalted butter at room temperature
1 can evaporated milk
1 1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 of your favorite allspice
1/2 teaspoon vanilla extract
2 regular pie shells
Set your oven at 350 degrees, Bake the sweet potatoes in their skin until they are nice and tender. Bake for 1 hour and 20 minutes.
Take the sweet potatoes out of the oven and allow them to cool. Peel the potatoes from the skin and throw the skin away. In a medium-size mixing bowl, add the sweet potatoes, and your eggs, butter, 1 teaspoon of cinnamon, nutmeg and 1/4 cup of sugar, 1 cup brown sugar, and whip until incorporated.
Add the evaporated milk a little at a time until the filling becomes loose, after that pour the filling into a pie crust.
Preheat your oven 350 degrees
Take the remaining of the evaporated milk, 1/2 teaspoon cinnamon and 1/4 cup sugar and added to a saucepan. heat on the stove until the sugar is dissolved. Now take a small brush and based the mixture on top of the pie filling. Try to smooth out the top of the pie also.
Place your pie in the oven and bake it for 50 minutes or until the pie is firm to the touch.
Now remove your pie from the oven and allow it to cool down slightly before eating... Enjoy

Our homemade sweet potato pie recipe is Better Than Patti LaBelle's Sweet Potato Pie... Hands down! So if you are looking for a sweet potato pie recipe - give this one a try.
Ingredients:
2-3 large orange-fleshed sweet potatoes, (you need 3 cups cooked and pureed)
125 mL (½ cup) butter, melted
60 mL (¼ cup) packed light brown sugar
60 mL (¼ cup) Maple Syrup
3 large eggs
60 mL (¼ cup) 35% whipping cream
2 mL (½ tsp) ground cinnamon
5 mL (1 tsp) freshly grated nutmeg
30 mL (2 Tbsp) bourbon
2 mL (½ tsp) coarse salt
Method:
Preheat oven to 240ºC (475ºF).
Prick the sweet potatoes with a fork and bake until the sweet potatoes are tender when pierced with a knife, about an hour.
Peel the sweet potatoes and discard the skins.
Use a hand-held electric mixer to blend until creamy and smooth.
You'll need 3 cups for the filling; scoop out the remainder and reserve for another use.
Lower the oven to 180ºC (350ºF).
To the sweet potato puree, add the melted butter, brown sugar, maple syrup, eggs, cream, cinnamon, nutmeg, bourbon, and salt.
Beat on medium speed until well incorporated.
Pour filling into a 9½ deep dish pie shell, and bake until a knife inserted in the centre of the filling comes out clean yet the filling still jiggles a bit, 1 to 1 1/2 hours.
Transfer to a wire rack to cool completely.

Flaky White Bean Pot Pie
HOLY ALL-PURPOSE FLOUR! I MADE A VEGAN POT PIE AND IT. TASTES. AMAZING.
Budget some time for this one - especially if you're new to cooking (or to pot pies), because it took me, like, two hours to make this lol But IT'S SO WORTH IT. The thyme gives it a nice, herb-y flavor. The white bean filling is thick and filling. And jeezus, the CRUST is buttery and flaky!
And it's all vegan to boot. :D I'm super stoked with how this turned out. Made it on Monday and I'm *still* eating leftovers (it's Thursday lol).
