How To make Vermicelli w/Tomatoes & Chipotle Chiles
1/4 cup vegetable or olive oil
1/2 pound vermicelli, broken into small pieces
1 small onion
finely chopped
2 cloves garlic :
minced
3 medium tomatoes, peeled and coarsely chopped into
1/4" chun
ks 2 canned chipotle chiles :
finely chopped
1 teaspoon fresh oregano leaves or 1/2 tsp. dried
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
3 cups vegetable broth
1 cup freshly grated Parmesan cheese (optional)
1/2 cup fresh parsley -- chopped
Heat oil in a large pot. Add the vermicelli and stir-fry over high heat u ntil well-coated and starting to turn golden, about 1 minute. Add onion and garlic and continue stirring until the onion wilts slightly, about 1 minute. Add the tomatoes, chiles, oregano, salt & pepper, and simmer until the tomatoes wilt, about 3 minutes. Stir in the vegetable broth and bring to a boil. Reduce heat and simmer u ntil most of the liquid is absorbed, about 15 minutes (add more stock, if neces sary, during cooking). Transfer to a serving dish, and sprinkle with Parmesan cheese, if desired. Serve immediately.

Delicious and very easy to make is this fresh tomato egg noodles with a kick of chipotle for a bit of spiciness.

FRESH TOMATOES EGG NOODLES RECIPE:
INGREDIENTS:
100g fresh egg noodles
1 yellow bell pepper
6 medium tomatoes
1 medium onion
1 garlic head
1 teaspoon chipotle powder
Black ground pepper
Salt
All purpose seasoning
1 tablespoon Dark soy sauce
3 Bay Leaves
Thai basil
DIRECTIONS:
Depending on the noodles you use, follow the directions on the package to cook them.
Mine are ready to be cooked, others might need boiling on their own before cooking with
them.
Slice the onion. Peel and slice the garlic. Slice the pepper. Slice the tomatoes.
In a wok on medium heat, add oil and allow to get hot. Add the bay leaves and cool
for 1 minute. Add the onion and the bell pepper in and sauté for a few minutes, then add
the garlic and cook until golden in colour, mixing occasionally. Add in the tomatoes and
cook for a few more minutes, to allow the juice of the tomatoes to come out.
Add salt to taste, ground pepper to taste and the teaspoon of chipotle powder for a nice
kick. Mix well and cook for 5 minutes longer, then add the egg noodles and cook for a further
5 minutes, mixing well to incorporate the noodles in the sauce. Towards the end, add in the
Thai basil.

1 pound boneless skinless chicken breast
1 teaspoon Italian seasoning
1 teaspoon paprika
1 teaspoon garlic powder
