How To make Vegetable Dahl Soup
3 tb Yellow split peas
3 tb Mung beans
3 tb Basmati rice
2 tb Ghee
1/2 ts Turmeric
1/8 ts Asafetida
1/2 sm Seeded green chili
1 ea 1/2" piece of ginger root
2 ea Medium sized carrots, sliced
1/2 sm Cauliflower, in florets
6 ea Red radishes
5 1/4 c Stock
1 tb Cumin
1 tb Coriander
1 ts Garam masala
1/2 ts Black pepper
1 ts Salt
2 tb Minced coriander
Soak the split peas in hot water for 1 hour & drain. Wash the Mung beans well & pick out any loose stones & sticks, etc. Combine rice, legumes, ghee, turmeric, asafetida, chili, ginger root, vegetables & stock in large pot. Cook for about one hour. Blend the vegetables at high speed to make a very creamy & smooth soup & return to the pot. Sprinkle in the ground coriander, cumin & garam masala. Heat till almost boiling & simmer gently for 2 to 3 minutes, stirring to prevent burning. Add the black pepper, salt & minced coriander & serve. Yamuna Devi, "The Art of Indian Vegetarian Cooking"

கொத்தமல்லி இலை நறுக்கியது

தண்ணீர்
செய்முறை:
1. துவரம் பருப்பு, மைசூர் பருப்பு, பாசி பருப்பு சேர்த்து கழுவி 10 நிமிடம் ஊறவிடவும்.
2. குக்கரில் நெய் சேர்த்து நறுக்கிய பூண்டு, இஞ்சி, பச்சை மிளகாய், வெங்காயம் சேர்த்து வதக்கவும்.
3. பின்பு நறுக்கிய தக்காளி, பூசணிக்காய், கேரட் சேர்த்து வதக்கவும். .
4. பிறகு ஊறவைத்த பருப்பு, மஞ்சள் தூள், உப்பு சேர்த்து வதக்கி தண்ணீர் சேர்த்து கலந்து 4 விசில் வரும் வரை வேகவிடவும்.
5. பின்பு நன்கு ஆறவிட்டு மிக்ஸியில் போட்டு தண்ணீர் சேர்த்து விழுதாக அரைக்கவும்.
6. பிறகு கடாயில் சேர்த்து பின்பு தண்ணீர் சேர்த்து கலந்து கொள்ளவும்.
7. பின்பு மிளகு தூள், சீரக தூள், காஷ்மீரி மிளகாய் தூள் சேர்த்து கலந்து 5 நிமிடம் குறைந்த தீயில் வேகவிடவும்.
8. கடைசியாக நறுக்கிய கொத்தமல்லி இலை சேர்த்து குறைந்த தீயில் 2 நிமிடம் கொத்திக்கவிடவும்.

Dal Shorba Recipe:
Moong Dal - 2 tbsp
Masoor Dal - ¼ Cup
Toor Dal - ¼ Cup
Water - 3 Cups
Ghee - 1 tbsp
Cumin Seeds - ½ tsp
Ginger- Garlic Paste - 1 tbsp
Green Chillies (chopped) - 1 no
Red Chilli Powder - ¼ tsp
Dry Ginger Powder - ½ tsp
Black Pepper Powder - ¼ tsp
Salt - 1 ¾ tsp
Lemon Juice - 1 tbsp
Coriander Leaves (chopped) - 2 tbsp
Fresh Cream - 1 tbsp
Cooking Instructions:
1. Wash the dal.
2. Pressure cook the mixed dals for 2 whistles with salt.
3. Add a cup of water and Mash/ Puree the dal.
4. Heat ghee in a pot and add the cumin seeds, once aromatic add the ginger-garlic paste and green chillies, and saute for 2 mins.
5. Add the powdered spices and mix well.
6. Pour the dal and simmer for 5 mins.
7. Finish with lemon juice and chopped coriander leaves.
8. Garnish with fresh cream.

INGREDIENTS:
- 3/4 Cup Red Lentils/Dhal (Masoor Dhal)
- 3-4 Garlic cloves sliced
- 1/2 medium size Onion sliced
- 8-10 Curry leaves (separated from stem)
- 1/2 tsp Mustard seeds
- 1/4 tsp Turmeric powder
- 2 3/4 Cup water (room temperature)
- Salt per taste
- Black ground pepper
- 2-3 tbsps Olive Oil
This soup can serve to 2-3 people according to the size of the soup bowl

To Make Dal Soup
Toor Dal - 2 Tbsp
Masoor Dal - 2 Tbsp
Moong Dal - 2 Tbsp
Ghee - 3 Tsp
Garlic - 2 Cloves
Ginger
Green Chilli - 2 Nos
Onion - 1 No.
Tomato - 1 No.
Pumpkin - 1 Cup
Carrot - 1 No.
Turmeric Powder - 1/4 Tsp
Pepper - 1 Tsp
Cumin Powder - 1 Tsp
Kashmiri Chilli - 1 Tsp
Coriander Leaves
Salt
Water
Method:
1. Take toor dal, masoor dal and moong dal in a bowl.
2. Wash them nicely and soak them in water for about 10 mins.
3. Take ghee in a pressure cooker.
4. Add chopped garlic, ginger, green chillies and onions to it. Saute until the onions are pink.
5. Then add in chopped tomatoes, pumpkin and carrot.
6. Saute the vegetables for a few mins.
7. Add in the soaked dal, turmeric powder and salt. Mix well.
8. Add 2 cups of water to the cooker and mix. Pressure cook the dal & veggies for 3-4 whistles on a medium low flame.
9. Cool the cooked dal and vegetables. Transfer them into a mixer jar, add water and grind into smooth paste.
10. Transfer the ground paste into a pan and add water. Mix.
11. Add in pepper powder, cumin powder and red chilli powder. Add salt if required.
12. Boil the mixture for 5 mins on a medium low flame.
13. Add in coriander leaves and cook for 2 more mins. Add water if required/
14. Mix it all well.
15. Healthy and wholesome dal soup is ready to be served hot and nice.
