Nilla Wafers Cake
This is a vintage recipe that I thought I'd share with y'all. It is so easy to make and you are going to love the taste and texture. It is a Nilla Wafer Cake that is made with an entire box of Nilla Wafer cookies. Did your mom or grandma make this? It's one I am sure grandma Jean would have made. Ingredients:
1 entire box Nilla wafers - crushed
1 cup butter at room temperature
2 cups sugar
1 teaspoon vanilla
6 eggs
1/2 cup milk
1 cup crushed pecans
7 ounce bag of coconut
1 pinch of salt
Cream together the butter, vanilla and sugar.
Add eggs one at a time till the yellow disappears.
Alternately add the milk and cookie crumbs. Begin with milk/end with cookie crumbs.
Add in the salt, coconut and pecans and stir to combine.
Pour into a prepared 9x13 baking dish.
Bake in a preheated 300°F oven for 55-60 minutes.

My homemade vanilla wafers are perfect for enjoying on their own or in banana pudding, can be made in less than 30 minutes with basic ingredients (and there's no chilling required)!

Ingredients
½ cup unsalted butter, softened (113g)
2/3 cup granulated sugar (133g)
1 large egg, room temperature preferred
4 teaspoons vanilla extract
1 ½ cups all-purpose flour (190g)
¾ teaspoons baking powder
½ teaspoon salt
1 Tablespoon milk

Instructions:
00:00 Introduction
00:23 Preheat oven to 350F (175C) and line a baking sheet with parchment paper. Set aside.
00:27 Combine butter and sugar in a mixing bowl and use an electric mixer to beat together until creamy and well-combined.
00:44 Add egg and vanilla extract and stir on medium/low speed until completely combined.
00:55 In a separate bowl, whisk together flour, baking powder, and salt
01:11 Add about half of the flour mixture to the butter mixture and stir on low-speed to combine.

01:22 Finally, add remaining flour mixture and stir until combined.
01:36 Scoop dough into two-teaspoon sized scoops and drop onto prepared baking sheet, spacing cookies at least 2” apart. Lightly flatten with damp fingertips.

2 cups whole milk
⅓ cup granulated sugar
2 tablespoons tapioca starch (or cornstarch)
½ teaspoon salt
2 large egg yolks
2 tablespoons unsalted butter
1 tablespoon vanilla extract
Instructions: Whisk sugar, tapioca starch and salt in a saucepan. Whisk in the milk. Heat the mixture, whisking constantly over medium heat. Once it thickens, cook for one minute. Add the egg yolks to a large bowl and add half of the milk mixture, whisking as you add it so that it tempers the eggs.(This will prevent them from scrambling.) Pour it back into the saucepan and heat for one minute, whisking constantly. Remove from heat, add the butter and vanilla, and stir until melted. Cover with plastic and chill in fridge.
???? Gluten Free Nilla Wafer Ingredients:
1 ½ cups almond flour (finely ground)
½ cup tapioca starch
6 tablespoons granulated sugar
1 teaspoon cream of tartar
½ teaspoon baking soda
½ teaspoon salt
4 tablespoons unsalted butter (melted)
1 large egg
1 tablespoon + 1 teaspoon vanilla extract
Instructions: Mix ingredients in a bowl. Place in the fridge for 30 minutes to chill. Preheat your oven to 325°F (162°C) and line two baking sheets with parchment paper. Each cookie uses 1 ½ teaspoons of dough. Roll each portion into a ball and then use your finger to press the ball down into a disc shape. Place them on the cookie sheet 2 inches apart. Bake the cookies for 20 minutes, turning halfway through the baking time. Transfer the baked cookies to a cooling rack to cool.

1 cup heavy cream (cold)
½ teaspoon cream of tartar
8 oz. cream cheese (room temperature)

Instructions: Beat heavy cream and cream of tarter in a mixing bowl until it forms stiff peaks. Beat the cream cheese and sugar in separate bowl until smooth. Add the cream cheese to the whipped cream and beat until just combined. Chill until ready to assemble.

???? Assembly: Layer all of the ingredients in 9 x 13 dish, cover and chill for a minimum of 2 hours.

Recipe: Vanilla Wafers
This is a simple, yet delicious recipe and an absolute staple of the kitchen.
Vanilla Wafers:
1/2 cup (125g) butter
2 cups (250g) powdered sugar
3 egg whites + 1 whole egg
1 1/3 cups (170g) flour
2 tsp vanilla extract or 2 tbsp vanilla sugar
pinch of salt
Cream butter and powdered sugar until smooth and fluffy. Beat in eggs one at a time. Briefly combine flour, vanilla and salt. Do not overbeat with the flour. The dough will be quite thin. Place in a piping bag with a round tip or no tip. Pipe small cookies shapes onto a lined baking sheet leaving lots of space between them. Bake at 350°F or 180°C for about 6-8 minutes or until cookies begin to brown.
