Low Fat Garlic Tuna Pasta Casserole Recipe
Here's a quick and easy recipe I came up with when I thought I was out of food! I scoured my pantry and refrigerator and came up with a Low Fat Cheesy Garlic Tuna Pasta Casserole Recipe. This recipe hits nearly all of the important food groups. We have a solid dose of protein from the tuna, we get our healthy carbohydrates from the whole wheat pasts, we get some casein protein from the cottage cheese and we even toss in a few vegetables for good measure. I nuked this in the microwave, but you could also layer this in a baking dish and put it in the oven. If you really want to get creative, you can even get some whole wheat lasagna noodles and make Cheesy garlic tuna lasagna. At the end of the day, the bowl I made in the video had about 225 calories, 25g protein and about 1g fat.
Ingredients:
1/3c frozen vegetables
1/3c non-fat cottage cheese
1/8c shredded non-fat cheese
1/2 tbsp McCormick perfect pinch garlic and herb seasoning
1/2 can tuna
3/4c whole wheat pasta
Directions:
Warm the veggies in the microwave
In a separate dish mix the cottage cheese, cheese, seasoning and tuna
Mix together the pasta and veggies
Spread the cheese mixture over the top of the pasta/veggie bowl
Microwave for about 90 seconds

No-fail, crowd winner, pantry-ready sushi bake recipe!
Cheesy Spicy Tuna Sushi Bake
Serves 2-3
Ingredients:
2 cans hot & spicy tuna
2 cups of Japanese rice
2 tbsp. sriracha (or less if you don’t like it to be too spicy)
4 tbsp. Kewpie Japanese Mayonnaise
1 tsp. Kikoman
1 tsp. Chili powder (for those who want it extra spicy)
Sesame oil
Furikake (Japanese rice seasoning)
Quick-melt cheese
Seaweed sheets
Optional: sesame seeds
Procedure:
Cook rice
Open tuna cans and remove excess tuna liquid
Cook tuna over medium-high heat
Add Sriracha and Kewpie, adjust according to preference. We add more mayo to make it creamier!
Add kikoman and chili powder (for those who want it extra spicy)
Drizzle with sesame oil
Mix well and set aside
FIRST LAYER:
Once rice is done cooking, get your square pan.
spread rice for the first layer
Add tuna mix, spread evenly
Add quick melt cheese chunks (add as many as you like, we made it in chunks, but you can put grated cheese for more even distribution)
Sprinkle furikake
SECOND LAYER:
spread another layer of rice
add tuna mix
add cheese
sprinkle furikake
drizzle with japanese mayo
top with sesame seeds (optional)
Bake in oven for 5 minutes or until cheese melts
Serve hot along with seaweed sheets!
Enjoy!
Notes:
*You can remove the tuna after heating before mixing the other ingredients. We cooked ours to infuse the flavors but either way works!
*We like our tuna mix saucy so we leave some of the canned tuna oil in the mixture. It also makes the rice extra flavorful!
*Adjust your Sriracha + Kewpie ratio according to preferred taste
*Use grated quickmelt cheese for a more even cheesy experience!
*We used seasoned Korean nori sheets

Tuna Noodle Casserole
Serves 4 to 5
Source: Grandma’s Scrapbook - Magazine or newspaper clipping of unknown origin
I cut the original recipe in half.
Oven set to 375⁰F.
Ingredients:
Egg Noodles
Can Cream of Mushroom Soup
Milk
table salt
black pepper
powdered onion
frozen peas and carrots
chopped pimiento or chopped roasted red pepper (I could not find pimiento at my store so I substituted roasted red pepper)
One 5 ounce can flaked tuna (drain the liquid) or canned chicken (drain the liquid) or ¾ cup cooked and chopped chicken
(I used one can of 5 ounce tuna but the recipe actually calls for one 7 ounce can of tuna. That would be 1 1/2 cans at the current size of cans. I didn't want to waste the extra tuna. I think you could use 2 cans of tuna for more protein. My family is not super excited about tuna so I went for the smaller amount.)
Shortening or butter to grease the casserole dish
Equipment:
Strainer - the little red thing strains cans, use any strainer you have
Colander
Saucepan
Mixing bowl
Small bowl
2 quart casserole dish
Oven
