Potato Tuna Patties Recipe
Potato Tuna Patties can be served either for breakfast, lunch or dinner alongside a fresh salad and your favorite dipping sauce, either as appetizer. They keep well refrigerated and can be used for the next day meal, either warm or cold. Tuna in combination with mashed potato, corn, lemon and green onion seems to be a winner for our family and I am certain it will be for you too. Just give them a try.
Ingredients
Makes about 12 patties
10 oz (300 g) potatoes, boiled with their skin on and chilled
1 can (7 oz- 185g) tuna in oil, drained, flaked
1/2 cup corn kernels
2 spring onions, chopped
1 egg
lemon zest from 1 lemon
1/2 cup breadcrumbs
Salt and freshly ground black pepper
2 tbsp olive oil
1/2 cup breadcrumbs, for coating
Directions
1. Mash the potatoes using a potato masher.
2. Add the tuna flakes and mix with a fork.
3. Add corn kernels, chopped spring onions, egg and breadcrumbs.
4. Finally add lemon zest and season with salt and pepper. Stir well to combine.
5. Divide mixture into 12 portions. Shape them into patties. Place breadcrumbs on a plate and add the patties to coat.
6. Heat oil over medium high heat in a nonstick pan. Cook patties for about 3 minutes on each side until golden brown. Transfer the patties to a plate lined with paper towel to remove excess oil. Clean the pan with a paper towel and repeat until all patties are done.
7. Serve with your favorite salad, and sauce. We served it with our homemade chilli jam.

Vegan Tuna Burger recipe **MADE WITH CHICKPEAS** SUMMER IDEA!
LAY HO MA everyone! Here's a burger recipe you're definitely going to want to make. A delicious patty with a crispy panko crust - serve with a side of fries, and you'll have an incredible meal. Join me in this episode and learn how to make an easy vegan burger recipe. Let's begin.
Ingredients:
1 1/2 cups canned chickpeas
1 tbsp white sesame seeds
1 tbsp fresh dill
1 tbsp crushed pepper
1 tbsp soy sauce
1 tbsp dijon mustard
1 tbsp tahini
a generous squeeze of lime juice
1/4 cup all-purpose flour
3/4 cup panko
2 tbsp olive oil
2 burger buns
your choice of burger toppings
Directions:
1. Preheat the oven to 375F
2. In a mixing bowl, add the chickpeas, sesame seeds, dill, crushed pepper, soy sauce, dijon mustard, tahini, and fresh lime juice
3. Mash the chickpeas with a fork
4. Line a plate with all-purpose flour
5. Scoop out half of the chickpea tuna, and shape into a burger patty
6. Gently dust the patty in the flour
7. Heat a frying pan on medium heat. Add the panko and a drizzle of olive oil
8. Gently stir and cook the panko until golden brown
9. Spread the panko onto a plate
10. Wet your hands with some water, then gently moisten the patties and gently coat them in the panko
11. Place the patties onto a baking tray, and bake in the oven for 25-35min
12. A few minutes before the patties are done, toast some buns on the frying pan
13. Top your burgers with your choice of toppings!

Tuna Burgers Recipe | Meal Studio
Lighter than a regular burger, these Juicy Stovetop Tuna Burgers are a great alternative for when you're craving a burger but want a lighter meal option. Doctors recommend eating fish once or twice a week and tuna is by far the easiest (and cheapest) way to do so. What makes these Stovetop Tuna Burgers so great is that they're juicy and not dry like other tuna burgers because of the added potato. Coupled with the egg, it acts as both a binder and a moisture trap.
The Yogurt Coleslaw topping is also a lighter version of my favorite burger topping, coleslaw. Using yogurt adds an acidic tang that I think makes it a hundred times better than traditional coleslaw. Paired with the white wine vinegar and capers, I doubt you'll be going back to regular coleslaw anytime soon.
Ingredients:
12 oz canned tuna
⅓ cup breadcrumbs
2 tsp lemon juice
2 tbsp onion, chopped
2 tsp horseradish mustard (if you can't find this, dijon mustard works well too)
1 tsp dry parsley
½ tsp hot sauce
1 egg
1 potato, cooked, peeled, chopped
2 tbsp olive oil
1 tsp butter
4 buns
salt
pepper
For the yogurt coleslaw:
14 oz coleslaw mix
½ cup greek yogurt
2 tbsp relish
1 tbsp white wine vinegar
1 tbsp capers, chopped
1 tsp coarse-grained mustard
Directions:

First, drain the tuna and put it into a bowl.

Add the lemon juice, mustard, onion, breadcrumbs, parsley, hot sauce, salt, and pepper. Mix everything to combine. Stir in the potato and egg.

When combined, form into 4 balls and flatten into patties. Put them in the refrigerator until needed.

Meanwhile, to make the yogurt coleslaw, mix all of the ingredients except the coleslaw mix. Then add the coleslaw mix and stir until everything is well coated. When combined, season with salt and pepper.

Heat a non-stick skillet over medium heat, and melt the butter with olive oil. When melted, add the patties to the pan, and cook 4 minutes per side, or until some color appears on both sides. Remove it from the pan and place it onto the bun, top with the yogurt coleslaw and serve.
