How To make Tomato and Leek Casserole
5 Or 6 large leeks
2 lb Firm tomatoes
x Ff grated cheese (amount Optional according to Taste) x Bread crumbs x Red wine vinegar x Marjoram, thyme, sage, Pepper, rosemary Slice leeks and tomatoes. Layer in casserole dish (leeks on the bottom so the juice from the tomatoes helps cook them :). Sprinkle with red wine vinegar. Add cheese. Add layer of bread crumbs. Spice according to taste. (Repeat layer if desired). Cook at 375 until bread crumbs are golden. The amounts of ingredients in this one can be varied. Some ppl prefer more tomatoes, while I am allergic to them so tend to skimp there :) The lack of cooking time is due to the origination of the recipe. I learned it in Holland and the oven temps there are far different from here. We usually made it in some old nearly broken down toaster oven so the time varied with each attempt :) I have found many non vegan friends love this recipe. Ingredients:
4 chicken breasts
1 large egg
3 tbsp plain all-purpose flour (replace with gluten free flour blend if needed)
1/4 tsp salt
1/2 tsp freshly ground black pepper
1/2 tsp dried oregano
1/2 tsp dried thyme
1/2 tsp dried paprika
1/4 tsp garlic salt
3 tbsp olive oil
1 brown onion peeled and sliced
2 cloves garlic peeled and minced
1/2 tsp dried oregano
1 tsp paprika
1 cup (160g) sun dried tomatoes I like the bright red one from the deli counter
1 red bell pepper de-seeded and sliced
1 tbsp tomato puree (paste)
1/3 cup (90ml) white wine
1 cup (240ml) chicken stock (use bouillon for gluten free)
pinch of salt and pepper
1/3 cup (90ml) double (heavy) cream
1/2 packed cup (50g) parmesan cheese grated
3 packed cups (90g) fresh baby spinach
1 tbsp chopped parsley

TURKISH LEEK STEW
RECIPE
Ingredients:
2 bunches Leeks
2 carrots, sliced
1 teaspoon tomato paste
Directions:
2 tablespoons rice or bulgur wheat
4-5 table spoons oil 1-1 1⁄2 cup water
Peel the top layer of Leeks. Rinse them. Chop the Leeks, soak them for 10 or 15 minutes to loosen dirt and wash well in a large bowl.
In a pan, sauté the sliced carrots. Add tomato paste, Leeks, pre-rinsed rice. Season with salt and stir. Then add 1 cup of hot water, bring to a boil, reduce the heat, cover and let it simmer. If the liquid gets completely absorbed,1⁄2 cup of water can be added.
