How To make Turkey and Leek Casserole
2 tb Margarine or butter
5 md Leeks or
2 md Onions -- sliced
2 tb All-purpose flour
1/2 ts Salt
1/4 ts Ground nutmeg
1/8 ts Pepper
1 c Chicken broth
1 c Milk
3 c Cut-up cooked turkey or
Chicken 1/2 c Finely chopped fully cooked
Smoked ham 1 Jars (2 ounces) diced pimien
Drained 3 c Hot cooked noodles
1 c Shredded swiss cheese :

Ounces) Heat oven to 350 degrees. Heat margarine in 3-quart saucepan over medium heat. Cook leeks in margarine about 7 minutes, stirring occasionally until softened. Stir in flour, salt, nutmeg and pepper. Cook over medium heat, stirring constantly, until bubbly; remove from heat. Stir in broth and milk. Heat to boiling, stirring constantly. Boil and stir 1 minute. Stir in turkey, ham and pimiento.Spread about half of the turkey mixture in ungreased square pan, 9 X 9 X 2 inches, or 2-1/2-quart casserole. Spread noodles over turkey mixture.Top with remaining turkey mixture. Sprinkle with cheese. Bake uncovered 25 to 30 minutes or until cheese is light brown. 8 SERVINGS (ABOUT 1 CUP EACH); 315 CALORIES PER SERVING.

22cm enamel pie dish
Short Crust Pastry
Vegetable oil
4 large chicken Fillets or left over Turkey
10 Rashers of Smokey Bacon
300g Chestnut Mushrooms
2 Leeks
60g Butter
30g plain Flour
300ml Boiling water or 150ml water 150ml milk
1 chicken stock cube
2 tbsp chopped flat leaf parsley
2 tbsp Crème Fraìche
Pepper to season

TURKISH LEEK STEW
RECIPE
Ingredients:
2 bunches Leeks
2 carrots, sliced
1 teaspoon tomato paste
Directions:
2 tablespoons rice or bulgur wheat
4-5 table spoons oil 1-1 1⁄2 cup water
Peel the top layer of Leeks. Rinse them. Chop the Leeks, soak them for 10 or 15 minutes to loosen dirt and wash well in a large bowl.
In a pan, sauté the sliced carrots. Add tomato paste, Leeks, pre-rinsed rice. Season with salt and stir. Then add 1 cup of hot water, bring to a boil, reduce the heat, cover and let it simmer. If the liquid gets completely absorbed,1⁄2 cup of water can be added.

I thought since it is getting cold, it is a perfect way to use up that leftover turkey meat. This soup turned out so hearty and delicious that I couldn't stop camera man from eating it :) And usually he is not even a big fan of soups. Ingredients For Leek In Olive Oil:
5 tbsp olive oil
About 750 to 1000gr Leek (cut half of the green parts)
1 onion
2 carrots
1 tsp salt
1 tsp sugar
4 tbsp rice
Half juice of an orange (optional)
1 juice of a lemon
About 1/2 to 3/4 cup water
More olive oil to drizzle on top
