How To make Lamb& Tomato Casserole
2 pounds shoulder lamb
2 ounces butter
1 ounce plain flour
1 teaspoon marjoram
1 can tomatoes
(8 ounces)
1 large onion
2 tablespoons oil
1/4 pint beef stock
salt and pepper
Instructions: :
Cut the lamb into 1 inch cubes and chop the onions. Cook in the butter and oil until the onions are soft and golden and the lamb is lightly browned. Stir in the flour and cook for 2 minutes. Add seasoning, marjoram, stock and tomatoes with their juice. Bring to the boil, stirring well. Pour into crockpot, cover and cook on HIGH for 30 minutes, then on LOW for 6-7 hours. How to cook the easiest lamb recipe with bell peppers for the family, this lamb stew recipe is so rich in flavor and so tender and delicious perfect for dinner or that Sunday family lunch.
INGREDIENTS
800G OF LAMB SHANK
1/2 OF BIG YELLOW BELL PEPPER
1/2 OF A RED BELL PEPPER
3/4 OF A MEDIUM ONION
11 SPRIGS OF FRESH THYME, 2 SPRIGS OF ROSEMARY, 2 LEAVES OF SAGE, BIND TOGETHER
2 TBSP OF BUTTER
2 TBSP OLIVE OIL
1/2 TBSP SUGAR
1 1/2 TSP SALT (ADJUST TO YOUR TASTE)
1 TBSP WORCESTERSHIRE SAUCE
3 MEDIUM MINCED CLOVES OF GARLIC
1 TBSP SWEET CHILLI
1 TSP SWEET PAPRIKA
1/2 TSP BLACK PEPPER
3/4 TSP BASIL
2 CARDAMOM
1 STAR ANISE
200G TOMATO PULP
500ML HOT WATER

LAMB TOMATO PHYLLO BITES
Makes 24 cups
Ingredients:
½ red onion, diced
¼ pound ground lamb
2 tsp ground cumin
1 tsp salt
½ tsp cracked pepper
15 cherry tomatoes, quartered
1 tsp dried oregano
24 phyllo dough cups (appetizer size)
4 tbsp crumbled feta cheese
4 tbsp fresh parsley, chopped
Method:
Preheat oven to 350 degrees.
Sauté red onions in olive oil until soft and caramelized. Add ground lamb, cumin, salt and pepper and brown until cooked through, breaking apart with a wooden spoon. Remove the lamb mixture with a slotted spoon and transfer to paper towels to drain fat.
In the remaining fat that's left in the pan, sauté cherry tomatoes until soft and broken down. Season with salt and pepper to taste and add dried oregano.
Spoon tomato mixture (about ½ tsp) into the phyllo cups, top with cooked lamb (1/2 tsp) mixture and a sprinkling of feta cheese.
Bake for 15-20 mins until phyllo cups are golden brown and feta is soft. Garnish with freshly chopped parsley.
Serve with your favorite sparkling wine (Cava or Prosecco are two good choices)

Ground Lamb and Potato Casserole
You’ll need-
1 lb. Ground lamb
Carrot
Onion
Garlic, minced
Salt & black pepper
Thyme
1 tbsp tomato paste
1/3 cup broth
Potatoes, sliced thinly
1 tbsp melted butter with fresh thyme
1. Add the ground lamb to a hot skillet and cook until all browned. Season with salt & pepper.
2. Add the chopped carrots and onions and cook until soften.
3. Add the minced garlic and cook for 30 seconds. Add the fresh thyme.
4. Add tomato paste and broth and simmer for about 5 minutes.
5. Add the mixture to a casserole and top with the sliced potatoes. Add the melted butter to the potatoes.
6. Bake at 375 degrees F for 30-35 minutes or until the potatoes are golden and crispy.
