Vegan tofu cream cheese
This tofu cream cheese is so easy to make, loaded with flavor, fully dairy-free and also nut-free. Makes for a delicious savory spread over bagels, but also amazing in sandwiches, stirred in creamy pasta dishes or to dollop over pizza. It is high in plant-based protein and can help you feel full longer!

Creamy Avocado Dressing / Dip + Pan Seared Tofu + Salad | Oil-Free Salad dressing

AVOCADO DIP:
1 medium ripe avocado (245g by weight including seed)
1/2 cup cilantro (18g)
1 small jalapeno (24g weight including seeds)
2 garlic cloves
Lime juice to taste (I have added 2 tablespoons)
1/2 cup thick Plant-Based yogurt (120g) (I have added coconut yogurt)
1/4 to 1/2 cup water (120ml) - (the water quantity will depend on the consistency of the yogurt you are using so adjust accordingly)
1/2 Ground cumin
1/2 teaspoon maple syrup or sweetener of choice
Salt to taste (I have added 1/2 teaspoon of salt)
Garnish it with freshly ground black pepper (Optional)
AVOCADO SALAD DRESSING:
1 medium ripe avocado (245g by weight including seed)
1/2 cup cilantro (18g)
1 small jalapeno (24g weight including seeds)
2 garlic cloves
Lime juice to taste (I have added 4 tablespoons)
1/2 cup thick Plant-Based yogurt (120g)
1/4 to 1/2 cup water (120ml) - (the water quantity will depend on the consistency of the yogurt you are using so adjust accordingly)
1/2 teaspoon ground cumin
1/2 teaspoon maple syrup or sweetener of choice (or to taste)
Salt to taste (I have added 1/2 +1/4 teaspoon of salt)
SALAD INGREDIENTS:
Lettuce
Pea shoots or Sprouts of choice (for added protein)
Cucumber
Red onion
Tomato
Tofu
1 tablespoon Olive oil to pan fry the tofu
METHOD:
Remove the skin and seed of the Avocado. Add the avocado, cilantro, garlic, jalapeno, lime juice, yogurt, water, cumin and salt as blend it. PLEASE NOTE that the quantity of lime juice and salt for the dip is slightly different from the salad dressing, as listed above. Also, the water quantity will depend on the consistency of the yogurt you are using so adjust accordingly.
CHUNKY AVOCADO DIP:
If you want a chunky dip, then mash the avocado with a fork, finely chop the cilantro, jalapeno, grate the garlic and add the rest of the ingredients and mix well. Add water only if needed otherwise you can skip the water all together.
PAN SEARED TOFU:
Season the tofu with salt and pepper on both sides. Now to a heated pan add 1 tablespoon of oil and add the tofu fry on medium to medium-high heat (depending on the heat of your stove) for 2 to 3 minutes each side. Serve on top of a bed of greens/salad.
IMPORTANT TIPS:
- The quantity of lime juice and salt for the dip is slightly different from the salad dressing, as listed above.
- Cilantro is a strong flavour so be mindful not to over do it
- To add the right creaminess add thick yogurt
- The water quantity will depend on the consistency of the yogurt you are using so adjust accordingly
- maple syrup is an important ingredient so please do not skip it, it balances out the flavours
- If you want a chunky dip, then mash the avocado with a fork, finely chop the cilantro, jalapeno, grate the garlic and add the rest of the ingredients and mix well. Add water only if needed otherwise skip the water
- Pan seared tofu is just an idea, you can add any cooked protein of your choice
- The dip/dressing stores well in the refrigerator for up to a week

- 2 Cups Organic Baby Spinach
- 1/3 Cups Chia Seeds
- 1 Cup Oil
- 1/3 Organic Tahini
- 454g Organic Firm Tofu
