How To make Toffee Almond Treats
CRUST:
1 c All-Purpose Flour
1 c Oats
1 c Brown Sugar, packed
1 ts Baking Soda
1/2 c Butter
TOPPING:
1/2 c Corn Syrup
1/3 c Brown Sugar, packed
1/4 c Butter
1/4 c Whipping Cream -OR-
1/4 c Evaporated Milk
1 1/2 c Almonds, sliced
1 1/2 ts Vanilla
CRUST: Combine all ingredients , mixing until crumbly. Press firmly into 13x9x2-inch (3.5L) baking pan. Bake in 350F(180C) oven for 10 minutes.
FILLING: Combine corn syrup, brown sugar, butter, and cream in a medium saucepan. Cook and stir over medium heat until mixture boils. Remove from heat. Stir in almonds and vanilla. Pour over crust, spreading evenly. Bake in 350F(180C) oven 15 to 20 minutes or until golden. Cool on wire rack. Cut into traingles, bars or squares. Store in refrigerator. Makes 48. NOTE: You may substitute All-Purpose Wheat & Oat flour for All-Purpose Flour.

Almond Toffee with Dark Chocolate
Almond Toffee w/ Dark Chocolate
2 ½ cups sugar
1 cup water
1 lb butter
1 ½ cups whole almonds
1 ½ cups 60% cacao Ghirardelli bittersweet chocolate chips
Line a 10” x 14” Stoneware Bar Pan with a large sheet of aluminum foil to cover the bottom and sides.
Combine water and sugar over medium heat in 8 Quart Stockpot. Stir just once to combine water & sugar. (NOTE: after this you’ll NEVER stir it again!*) Cook for 6 minutes.
Add 1 stick of butter and boil for 6 minutes. (repeat with an additional stick of butter every 6 minutes until you’ve used all 4 sticks) NEVER STIR!!
Cook to 290 degrees (approx 283 at high altitude). * * This could take 10-15 minutes more.
In the meantime, toast whole almonds in a dry skillet for 5-10 minutes or until they begin to smell fragrant. Finely process the almonds in a blender until they’re ground/powdery.
When the toffee is cooked gently pour into prepared pan. Be careful – it’s very hot! Smooth toffee with a small spreader. Immediately and carefully sprinkle chocolate chips evenly over the top. Let rest for a couple minutes so they can melt. Spread melted chips over the top and sprinkle ground almonds over chocolate. Let cool completely. Break into pieces and enjoy with a hot cup of tea!
Keep refrigerated. Can be frozen for 4 months.
* What happens if you can’t resist and stir anyway? You’ll ruin it! It will become grainy and not have the texture you like.
** I don’t use a thermometer. When the color is light brown just a shade lighter than Pampered Chef bamboo spoons it’s perfect!

TOFFEE RECIPE
1 C butter
1 C sugar
2 Tbsp Cornsyrup
1 C sliced almonds
1 C chocolate
(extra almonds finely chopped for the topping)
Bring the butter and sugar to a boil and boil until it reaches hard crack stage - 300 degrees - adjusting for your altitude

Toffee Almond Bites || A THM Candy Collaboration

***Toffee Almond Bites Recipe***
!Almond Bites
1 stick of butter
1/3 cup of Pyure Sweetener
1/3 cup of heavy cream
1 tsp of pure vanilla
pinch of salt
!Chocolate topping
4 oz of sugar-free chocolate chips
1/4 cup of heavy cream
Place the stick of butter, sweetener, and heavy cream into a saucepan over medium heat.
Heat the mixture until all the butter and sweetener are melted and let it come to a small boil, stirring often.
As the mixture boils it will slowly start to turn a golden brown color. Do not walk away from this toffee mixture as it will burn if you do not stir constantly at this point. The whole process should take about 8-10 minutes.
When the toffee is nice and brown remove it from the heat and add in the vanilla and the tablespoon of butter and stir until the butter is melted.
Add the 2 cups of sliced almonds to a bowl and break them up into smaller pieces if you desire.
Next, combine to make sure all the almonds have some of the toffee sauce on them.
Once combine add spoonfuls into a mini muffin tin that has been sprayed with cooking spray or greased well. Continue filling all the tins. You can use mini muffin papers if you desire.
Place the muffin tins in the freezer and let them chill for 20 to 30 minutes or until the Toffee Almond Bites are solid.
To top the Toffee Almond Bites add the sugar-free chocolate chips to a bowl and add 1/4 cup of heavy cream.
Warm the heavy cream and chocolate in the microwave, until it is hot but not boil, then remove the bowl carefully and stir the chocolate until all the cream is incorporated. The chocolate should be silky and smooth at this point.
When your chocolate is ready to start dipping a little onto the top of each frozen Almond Bite.
Once all the candies have been topped they need to be returned to the freezer to let the chocolate set.
Store in an airtight container in the fridge.
