Hot & Sour Vegetable Soup
Serves 6-7
Recipe in English:
Ingredients:
-Cooking oil 2 tbs
-Lehsan (Garlic) chopped 1 & ½ tbs
-Adrak (Ginger) chopped 2-3 tbs
-Hari mirch (Green chilli) chopped 1 tbs
-Hara pyaz (Green onion) white part ¼ Cup
-Fresh mushrooms sliced 6-7
-Gajar (Carrots) julienne ½ Cup
-Shimla mirch (Capsicum) julienne ½ Cup
-Baby corns ¼ Cup (optional)
-Matar (Peas) ¼ Cup
-Band gobhi (Cabbage) shredded 1 Cup
-Palak (Spinach) ½ Cup
-Water 2.5 liters or as required
-Kali mirch powder (Black pepper powder) 2 tsp
-Namak (Salt) ½ tbs or to taste
-Dark soy sauce 1 & ½ tbs
-Lemon juice 3 tbs
-Sirka (Vinegar) 1-2 tbs
-Sugar ½ tbs
-Cornflour 4 tbs or as required
-Water ½ Cup or as required
Chilli oil:
-Cooking oil ¼ Cup
-Lal mirch powder (Red chilli powder) ½ tbs or to taste
-Lal mirch (Red chilli) crushed ½ tbs
-Allspice powder ¼ tsp
-Hara pyaz (Green onion) chopped
Directions:
-In a pot,add cooking oil,garlic,ginger,green chilli & mix well for 1 minute.
-Add green onion white part,mix well & sauté until translucent.
-Add mushrooms & fry for 2 minutes.
-Add carrots,capsicum,baby corns and peas,mix well & cook for 2 minutes.
-Add cabbage & mix well.
-Add spinach & mix well.
-Add water,black pepper powder,salt,mix well and bring it to boil,cover & cook on medium low flame for 8-10 minutes.
-Add dark soy sauce,lemon juice,vinegar,sugar,mix well & cook for 2-3 minutes.
-In cornflour,add water and mix well.
-Now add dissolve cornflour,mix well and cook until desired consistency.
Prepare Chilli Oil:
-In small frying pan,add cooking oil,red chilli powder,red chilli crushed and allspice powder,mix well and simmer on low flame until aromatic.
-Pour prepared chilli oil and garnish with green onions leaves & serve!

-Mushrooms dal ker 2 minutes kliya fry ker lein.
-Gajar,shimla mirch,baby corns aur matar dal ker ache tarhan mix Karen aur 2 minutes kliya paka lein.
-Band gobhi dal ker ache tarhan mix ker lein.
-Palak dal ker ache tarhan mix karein.
-Pani,kali mirch powder aur namak dal ker ache tarhan mix karein aur ubal anay ka bad dhak dein aur darmiynai halki ancch per 8-10 minutes kliya paka lein.
-Dark soy sauce,lemon juice,sirka aur cheeni dal ker ache tarhan mix karein aur 2-3 minutes kliya paka lein.
-Cornflour mein pani dal ker ache tarhan mix ker lein.
-Ab dissolve cornflour dal ker ache tarhan mix karein aur desired consistency anay tak paka lein.
Prepare Chilli Oil:
-Chotay frying pan mein cooking oil,lal mirch powder,lal mirch crushed aur allspice powder dal ker ache tarhan mix karein aur khushbu anay tak halki ancch per paka lein.
-Chilli oil dal dein aur hara pyaz sa garnish ker ka serve karein!

Ingredients:-
Vegetables cut into juliennes:-
5-6 French Beans
1 medium sized carrots
¼ cup Bean sprouts
1 cup Green Cabbage
1 cup Button mushrooms
1 small Green Capsicum
2 tbsp. Vegetable Oil
3 tbsp. Spring onions, chopped
2 tbsp. Ginger Garlic Green chilli crushed
6 tbsp. Dark soy sauce
4 tbsp. Red chilli sauce
5 tbsp. Vinegar
4 cups Water or Vegetable stock
Salt to taste
¼ tsp. Sugar
½ tsp. Black Pepper powder
3 tbsp. Cornflour
¼ cup Spring greens finely chopped
5 tbsp. Red Chilli
Oil
Method:-
- In a wok heat oil till it starts smoking and add crushed ginger-garlic-green chilli and the sliced vegetables.
- Toss and stir fry on high flame.
- Add water/vegetable stock and boil on high flame for 2-3 minutes.
- Once boiled, add dark soy sauce, white vinegar, red chilli sauce and mix well.
- Now add salt, sugar, black pepper and stir.
- Then add the mushrooms and bean sprouts and do not mix.
- Mix corn flour with cold water until no lumps are seen and add it to the boiling soup.
- Stir and add spring greens and red chilli oil.
Serve piping hot garnished with red chilli oil and spring onions! HAPPY COOKING!!!

This canh chua ca recipe came from my mom. Im sure there are other ways to make it but this has been working for me since I learned to cook and I don't plan on changing it.
Canh chua ca which translates sour fish soup is a traditional Vietnamese dish. Don't be fooled by the name as this soup has the perfect balance of sweet, sour and savory. The sweetness comes from the sugar, the tartness comes from tamarind and the savory comes from the catfish. The rest of the ingredients (pineapple, tomatoes, okra) ties everything together making it the perfect comfort meal.
This meal reminds me of my childhood and when ever I'm missing my moms home cooked meals a little extra, I always make this dish and I know it will temporarily fix that problem (until I am able to drive 15-20 minutes to my parents house to get the real deal) haha.
I love pairing this with a bowl of warm white rice and caramelized catfish. When I go to the grocery store, I buy 1 large catfish about 5-6 lbs. I leave 2 lbs of catfish steaks aside to make ca kho (caramelized catfish) which I will have linked down below.
At the Vietnamese supermarket I go to, the butchers always clean/ prep the catfish for me. They do this at no additional charge and its a pretty cool service if you ask me.
When making this, make sure use A LOT OF fried garlic. I used 2 bulbs, I add half of the garlic into my pot of soup and kept the other half for serving.
