INGREDIENTS:
120 -150g ramen noodles
2-3 Green onions
2 cloves of garlic
2 Tbsp cooking oil
1 Tbsp chilli flakes
1 Tbsp dark soy sauce
1 Tsp brown/white sugar
1/4 Cup water
Toasted sesame seeds & chopped green onions to garnish
-Boil the noodles 1 minute less than packet instruction, drain & keep aside.
-Heat some oil in a pan. Add chopped garlic, chilli flakes, cook on low heat for 4-5 minutes.
-In a small bowl add the soy sauce, sugar and water, stir to combine. Once the garlic is slightly brown in colour add the soy sauce mixture and cook on high to medium heat until the sauce thickens a bit, for about 5 mins
-Then add the noodles and mix until the noodles are nicely coated. Add salt if required.
-Turn off the heat, garnish with some toasted sesame seeds and chopped green onions. Serve hot and enjoy! It’s taste better with poached or half fried egg.
NOTE: Recipe updated in March 2022. We found the noddles to work best with 2 cloves of garlic, 1 tbsp chilli flakes, 1 tbsp soy sauce instead.
-Add all the green onions at last and mix them with the noodles before serving. Frying them in oil looses it’s flavour.

Japchae - Korean Noodles!
Japchae - the bright, colourful Korean noodle dish made with an abundance of vegetables, juicy bits of marinated beef and a sesame-forward dressing. Made with sweet potato noodles which have a unique slippery, chewy texture, this is sort of a stir fry, sort of a noodle salad, and 100% YUM!

PS Traditionally, the vegetables are cooked individually to preserve the individual flavours and factor in different cook times. I've taken a bit of a short cut here and cooked them in two batches. Sometimes, I feel the need for speed. :) (Bonus: you use less oil)
Japchae – Korean noodles
CHOOSE A BEEF:
600g/1.2lb bone-in beef short ribs OR 300g/10oz boneless *RECOMMENDED*
300g/10oz scotch fillet/boneless rib eye
MARINADE: 2 tsp EACH soy sauce (all-purpose or light soy), white sugar, finely minced garlic, 1/2 tsp black pepper
SAUCE: 1/4 cup soy sauce (all-purpose or light soy), 2 tsp white sugar, 1/2 tsp finely minced garlic, 1 1/2 tbsp sesame oil, 1/2 tsp EACH cooking/kosher salt & black pepper
NOODLES & VEGETABLES:
250g/ 8oz sweet potato noodles (dangmyeon), dried*
4 tbsp vegetable oil (or other plain oil)
1 tsp cooking/kosher salt, divided
1 onion peeled, halved, sliced into 6mm/1/4″ wedges
3 green onion stems cut into 5cm/2″ lengths, white & green parts separated
200g/7oz fresh shiitake mushrooms, stem removed, cut into 5mm/1/5″ slices (Note 4)
2 carrots peeled, cut into 3mm / 1/8 batons
1 red capsicum/bell pepper cut into 0.5cm / 1/5″ slices
4 1/2 cups (tightly packed) baby spinach (280g bag)
2 tbsp white sesame seeds
1. Trim excess fat off beef, cut off bone (if using bone-in short ribs) then slice into thin strips 5mm thick, 1cm wide and about 5cm long (1/5 x 2/5 x 2). You want lots of small strips tossed throughout the noodles! Toss with marinade then set aside while you proceed with recipe.
2. Mix dressing in a BIG bowl (everything gets added into this bowl, so it has to be extra big).
3. Cook noodles per packet, drain, rinse under tap water, shake off excess water well, add into sauce in bowl.
4. Veg – Heat 2 tbsp oil over high heat in a large non-stick pan. Cook onion, white part of green onion and mushrooms with ½ tsp salt for 3 min. Pour on top of noodles. Heat 1 tbsp oil in same pan, cook carrot and capsicum 1.5 min. Then add spinach, green part of green onion and ½ tsp salt. Toss until spinach wilted. Add to bowl.
5. Heat 1 tbsp oil then cook beef just for 1.5 min until you can no longer see raw surface. Add to the noodle bowl, add most sesame seeds (reserve some for garnish). Then toss well! Toss, toss, toss. Pour into serving bowl, garnish with sesame seeds. Serve!
Hot & Sweet Crispy Noodles Recipe | Chef Sanjyot Keer
Full written recipe for Hot & sweet crispy noodles

Serves: 6
For fried noodles
Ingredients:
• Boiling water
• Oil 1 tbsp
• Noodles 1 packet (raw)
• Cornstarch 1/4th cup
• Oil for frying
Methods:
• Set water for boiling in wok, add a dash of oil and raw noodles, stir and boil the noodles for 5-6 minutes or till they are almost done.
• Strain the noodles and rinse it with cold water, transfer the noodles in a mixing bowl, add oil, salt a pinch and cornstarch, mix gently and coat the noodles well with cornstarch.
• Set oil in a wok or a pan on medium high heat, fry the noodles in batches, make sure you don not over crowd the pan while frying to avoid oil spillage. Fry the noodles until crisp and golden brown.
Hot & sweet paneer
Ingredients:
• Paneer 250 gm
• Salt & black pepper to taste
• Corn starch 1/4th cup
• Oil for shallow frying
• Oil 2 tbsp
• Garlic 4-5 cloves (chopped)
• Ginger 1 inch (chopped)
• Spring onion bulbs 4-5 nos.
• Capsicum 2 medium size (diced)
• Carrot 2 medium size
• Baby corn 4-5 nos.
• Sugar 1 tsp
• Spring onion green s1/4th cup (chopped)
• Schezwan sauce 1 tbsp
• Red chilli sauce 1 tbsp
• Ketchup 2 tbsp
• Soy sauce 1 tsp
• Water 200 ml
• Salt & black pepper to taste
• Cornstarch 3 tbsp + water 100 ml
• Spring onion greens 1 tbsp (chopped)
Methods:
• Add the paneer cubes in a mixing bowl, further add salt & pepper to taste and cornstarch, mix gently and coat the paneer well with the cornstarch.
• Set a pan on medium high heat and shallow fry the paneer from all side until crisp and golden brown.
• Set another pan on high heat, add oil, garlic, ginger and spring onion bulbs, sauté it for a minute.
• Further add capsicum, carrot, baby corn and sugar, mix well and sauté it for 1-2 minutes.
• Add schezwan sauce, red chilli sauce, ketchup and soy sauce, mix well, add water, salt & pepper to taste, mix well.
• Further add cornstarch and water mixture and cook until the sauce thickens.
• Further add fried paneer and finish it with some spring onion greens. Your paneer hot & sweet gravy is ready.
• Serve it immediately by adding the crushed fried noodles.

Mushroom Chow Mein with Sweet Sauce | Veg Chowmein Recipe
⌲ Ingredients:
Water: Two Jugs
Salt: As Per Taste
Oil: One Tbsp
Yellow Food Color: Half Tsp
Noodles: 250 Grams
Oil: Two Tbsp
Garlic Paste: One Tsp
Mushrooms: 100 Grams
Capsicum: One (Slices)
Onion: One (Slices)
Green Onion: Two (Slices)
Salt: As Per Taste
Black Pepper: One Tsp
White Pepper: Half Tsp
Soy Sauce: One Tsp
Hot Sauce: One Tsp
Oyster Sauce: One Tsp
Oil: One Tsp
Onion: Half (Chopped)
Garlic Ketchup: Two Tsp
Tomato Ketchup: Two Tsp
Sugar: Three Tsp
Jalapeno: Five To Six Pcs
Water: Two Tbsp
⌲ The Method of Preparation
✔ Step One:
Pour water in a pot
Then add salt, oil and food color to it and boil the water
Let the water boil
Then add the noodles and cover it on low heat
After five minutes, rinse the noodles with water
Then cover and cook for another eight minutes on low flame
✔ Step Two:
Now heat oil in a pan
Then add garlic and fry for three minutes
Now add capsicum, onion and green onion and mix it
Then add salt, black pepper, white pepper, soy sauce, hot sauce and oyster sauce and cook for four to five minutes.
Now add the boiled noodles and mix well
And keep covered on low flame for five minutes
✔ Step Three:
Heat oil in a pan
Add onion and cook for a minute
Then add garlic ketchup, tomato ketchup, sugar and jalapeño and mix it
Add water and cook for two minutes
Then take it out in a separate vessel
Delicious mushroom chowmein and sweet chutney is ready
Serve as you like
