How To make Swedish Pancakes with Lingonberries

BATTER:
1 1/2 c Flour; all-purpose
3 c Milk
2 Eggs
1 tb Sugar
1 ts Salt
Butter or oil for frying
GARNISH:
1 Lingonberry preserves; jar
Confectioners' sugar Butter Beat the eggs and add the milk and flour gradually along with the sugar and salt. Heat a platt pan or small frying pan over low heat and brush with oil or butter. Stir the batter well and cook thin and light pancakes. Serve with butter, lingonberry preserves and a bit of confectioners' sugar. You really should find a Swedish Platt pan for this. It makes small pancakes, about 3 inches in diameter, which are very much enjoyed by the Scandinavian 2 community. You can certainly make them in a larger form, but the little

Swedish Pancakes with Fresh Fruit
1 12 oz box Swedish pancake mix (Al Johnson’s)
2 eggs
3 cups milk
Empty contents of package into a large mixing bowl.
Mix in 2 eggs and 3 cups milk with dry ingredients until batter has a smooth consistency.
For best results, refrigerate overnight.
Bring a non-stick skillet to medium high heat and melt a small amount of butter in it or spray skillet with a non-stick cooking spray to cover pan.
Add approximately one quarter cup of batter to pan, allowing batter to spread by using a spatula or turning the pan to form a pancake.
Let batter cook for about a minute, then flip and allow it ti cook on the other side for about 30 seconds. You will see light brown spots and that will let you know when the pancake is done.
Fold in half and serve with lingonberries and syrup.

RECIPE - SWEDISH PANCAKES

INGREDIENTS
• 4 eggs
• 1/8 teaspoon salt
• 1 teaspoon sugar
• 1 cup flour
• 2 cups milk
• 4 Tablespoons melted butter
• Cottage cheese
• Lingonberry jam or strawberry preserves
DIRECTIONS
1. Add eggs and salt to mixer and mix well
2. Add sugar to eggs and mix until smooth
3. Slowly add flour to egg mixture and mix throughout this step
4. Slowly add milk and continue mixing, scraping bottom of bowl if needed.
5. Add melted butter to batter and blend until smooth
6. Heat a 10-inch pan using medium-high heat
7. When the pan is hot, spray with a thin layer of cooking spray, or use butter
8. Add 1/3 cup batter to pan and swirl the pan so there is a thin layer of batter evenly distributed on the pan
9. After the first side of the crepe has lightly browned, flip the crepe over and cook the second side for about 1 minute more
10. After plating the crepe, fill it with cottage cheese, roll the crepe, and top with lingonberry jam. Strawberry preserves also taste amazing.
