The one and only Claire Saffitz brings her incredible baking skills to our kitchen to show us all the tips and tricks for making the very best apple pie! Sharing knowledge from her new book, What's For Dessert, Claire takes us through her butter chopping technique, shaping the dough and laying it into the pie pan, combining the apple mixture with a hint of orange zest, placing the apples strategically into the pie pan, wrapping with the top crust, and baking until it looks about as good as a dessert possibly can. EASY Homemade Pie Crust Recipe:
Ingredients for Homemade Apple Pie:
►1 recipe for double pie crust:
►6-7 Granny Smith Apples, peeled, cored (2 1/4 lbs or 7 cups thinly sliced)
►1 1/2 tsp cinnamon
►8 Tbsp unsalted butter
►3 Tbsp all-purpose flour
►1/4 cup of water
►1 cup granulated sugar
►1 egg + 1 Tbsp water, for egg wash
Ingredients for Butter Pie Crust Dough Recipe:
►2 1/2 cups all-purpose flour plus more to dust, *measured correctly
►1/2 Tbsp granulated sugar
►1/2 tsp sea salt
►1/2 lb COLD unsalted butter (2 sticks) diced into 1/4 pieces
►6 Tbsp ice water (6 to 7 Tbsp)

BUTTERY FLAKY CRUST RECIPE
INGREDIENTS
2 lbs (907 g) Granny Smith apples ???? (or tart apple of your choice)
1/3 cup (60 g ) sugar
1/4 tsp salt
1 Tbsp (15 ml) fresh lemon juice
1/2 tsp ground cinnamon
3 Tbsp (30 g) all purpose flour
1 tsp vanilla extract
9 inch unbaked pie shell
CRUMB TOPPING
1 cup (145 g) all purpose flour
3/4 packed cup (165 g) light brown sugar
8 Tbsp (113 g) cold salted butter
INSTRUCTIONS
- Peel, core and thinly slice 6 to 8 tart apples
- Place thinly sliced apples in a large bowl, add sugar, salt, lemon juice, ground cinnamon, vanilla extract, all purpose flour and combine well
- In a separate bowl combine flour, light brown sugar and butter until a crumbled sand like texture
- To assemble place bowl of apple filling in to a cold unbaked 9 inch pie shell, top with crumb topping and Bake in a preheated oven @ 375 degrees F / 190 degrees C for 50 minutes
- Remove from oven and allow to cool and set for at least one hour

Everyone should try making this Classic Apple Pie Recipe for Thanksgiving! It is the only apple pie recipe you'll need. An easy to make and delicious apple pie recipe has a flakey crust and sweet apple filling that’s bursting with flavor! This recipe really amps up the flavor and makes for a very tasty pie!

Ingredients for making apple pie from scratch:
8 tbsp unsalted butter
3 tbsp all-purpose flour
1/4 cup water
1 cup sugar
7 apples
1 1/2 tsp cinnamon
Pie dough
Egg wash (1 egg 1 tbsp sugar)
Instructions for making homemade apple pie:
- Melt some unsalted butter over medium heat then stir in flour to thicken it
- Simmer the mixture for about a minute to cook out the flour then pour in a quarter cup of water
- The mixture should thicken at this point then add your sugar and bring up to a boil
- Reduce the heat and simmer for a few more minutes until the colour darkens slightly
- Put this aside to cool slightly while you prep your apples
- You’ll need 6-7 of your favourite baking apples that you have peeled and thinly sliced
- Transfer them to a large bowl then sprinkle with cinnamon and mix so the apples are thoroughly coated
- Now pour in the butter sauce and mix everything together
- Now prep your crust by rolling out one portion of your favourite pie dough into a rough 12 inch diameter circle
- Then wrap the dough over a lightly floured rolling pin to transfer it to the pie plate
- Unwrap the dough then gently press it into place so there is a little bit of overhang around the edges
- Now pour in your filling and spread it out so it’s slightly mounded in the centre
- Set this aside while you prepare the lattice crust
- Roll out another portion of dough into a rough circle
- Once you have another 12 inch circle, use a pizza cutter or knife to cut strips of even thickness
- Now take the longest strip and lay it across the middle of your pie
- Then lay two more strips on either side making sure the ones furthest from the centre are the shortest
- Peel back the second and fourth strips and lay the other longest strip down the centre
- Put the two strips back and peel back the alternating strips and add another strip of dough
- Continue this pattern until the lattice is complete
- Now you can use any remaining scraps of dough to fill in any gaps around the edges
- Then tuck the dough into the edge of the pie plate
- Push the dough in with one finger on one hand then pinch around it with two fingers on your other hand
- Then brush the top with egg wash which will give your pie a glossy finish
- Bake your pie at 425 for 15 minutes then turn the heat down to 350 and bake for another 45 minutes
- The pie needs to cool for at least an hour before you slice into it
- Your homemade apple pie is now ready to serve
