How To make Sunshine Orange Cream Cake
1/3 cup margarine
3 tablespoons packed light brown sugar
2/3 cup sugar
1/3 teaspoon vanilla extract
2 eggs
1 1/3 cups all-purpose flour
1/2 teaspoon baking soda
2 teaspoons double-acting baking powder
1/2 teaspoon salt
1 pint sour cream
2/3 cup milk
1 orange -- *see note
* Peel orange, cut into quarters and thinly slice across the sections, or cut into a pretty pattern of your choice.
1. Cream margarine and sugars until light and fluffy. Blend in
vanilla. Beat in eggs one at a time. 2. Stir flour, salt, soda, and baking powder together thoroughly;
blend into creamed mixture alternately with 1/2 cup sour cream and milk. Begin and end with flour. 3. Pour into greased and waxed paper-lined (grease the waxed
paper lightly also) 13 x 9 x 2-inch pan. Bake in preheated 350-degree oven, 25-35 minutes or until done. 4. COOL COMPLETELY before removing from pan.
5. Cut cake in half to form 2 layers 6-1/2 by 9 inches. Spread
3/4 cup sour cream over layer, arrange orange slices on sour cream.
Top with second layer. Garnish each serving with additional sour cream and orange slices.
* The sour cream is an acquired taste. You may prefer to sweeten it with sugar or honey, or with a mix of half sour cream and half sweetened whipped cream.

MANDARIN ORANGE CAKE! YOU WILL NOT BELIEVE WHAT HAPPENED TO THS CAKE!
Mandarin Orange Cake
1 package cake mix ( I used lemon)
1 15 ounce can mandarin oranges
4 eggs
1/4 cup oil
Combine cake mix, oranges. Eggs and oil
Mix good
Pour batter into a greased and floured cake pan
Bake 325 degrees for 20 to 25 minutes
Topping
1 16 ounce tub cool whip
1 5 1/2 vanilla instant pudding
20 ounces can crushed pineapple
3 tablespoons reserved pineapple
Mix throughly and refrigerate and frost only cool cake.

Orange Butter Cake Recipe:
1 1/2 Sticks Soft Unsalted Butter (3/4 C.)
1 1/4 C. Granulated Sugar
4 Large Eggs at Room Temperature
1 C. Buttermilk
1 T. Grated Orange Zest
Sifted together:
2 1/2 C. Cake Flour; spoon into the measuring cup. (Note: all-purpose flour can be used but cake flour yields a more tender cake)
2 t. Baking Powder
1/2 t. Baking Soda
1/2 t. Salt
Orange Buttercream Frosting
1 Stick Salted Butter at Room Temperature (if using unsalted butter add a pinch of salt to the frosting)
2 T. Milk (whole or 2 %)
2 T. Fresh Squeezed Orange juice plus more to get the consistency that is spreadable on the cake)
4 C. Confectioner's Sugar (powder sugar)
2 t. Grated Orange Zest
Bake Cake @350 degrees 25-30 minutes or until tester comes out clean. Check cake at 20 minutes.
