Stir Fried cucumber with Black Fungi and Chicken Chinese Style

Ingredient::
2 Cucumber
Ginger thin sliced
garlic choppes
20g black Fungi
(soak into the water for 20 mins,and boil in 5 mins).
Marinated for chicken:
150g chicken,sliced
1 ½ tbsp oyster sauce
1 ½ tbsp light soysauce
1 tsp cornstarch

Stir-fried Cucumber with Beef (Oi Sogogi Bokkeum) by Chef Jia Choi
This stir-fried cucumber with beef is a side dish is easy and quick to make.
Many people tend to think that cucumbers should be uncooked. But it become tender and crunchier when it’s stir-fried. Beef marinated in soy sauce mixture goes perfect with stir-fried cucumber.
Even if you’re not a big fan of cucumbers, I highly recommend this dish

Stir-fried Cucumber with Beef / Oi Sogogi Bokkeum
Ingredients
Cucumbers (500g)------------------------------------------------------------------------- 3
Beef, ground----------------------------------------------------------------------------------- 160g
Coarse salt------------------------------------------------------------------------------------- 1 tbsp
Water---------------------------------------------------------------------------------------------- 1 tbsp
Soy sauce--------------------------------------------------------------------------------------- 1 tbsp
Brown sugar----------------------------------------------------------------------------------- 1/2 tsp
Garlic---------------------------------------------------------------------------------------------- 1 clove
Sesame oil-------------------------------------------------------------------------------------- 1 tsp
Vegetable oil----------------------------------------------------------------------------------- 1 tsp
Ground black pepper---------------------------------------------------------------------- 1/3 tsp
Instructions
1. Remove the spines on cucumbers. Cut them in lengthwise and remove the seeds using a small spoon. Then thinly slice the cucumbers.
2. In a bowl, place sliced cucumbers. Add salt and water and mix well. Put it aside for 15 minutes.
3. Mince garlic. In a small bowl, add garlic, soy sauce, brown sugar, black pepper and sesame oil. Mix well. Combine the sauce with beef and thoroughly mix. Marinate it for 10 minutes.
4. Grab a big handful of cucumbers and give it a good squeeze to remove excess water.
5. Heat the pan over high heat. Add vegetable oil to it and stir fry the cucumbers for one minute. Transfer it to a plate and spread to cool.
6. In a same pan, place marinated beef and stir fry them in a high heat until fully cooked. Then lower the heat and add cucumbers and mix. Turn off the heat
7. Serve warm or in room temperature
