How To make Spanikopita
SPINACH FILLING:
1/2 c Vegetable oil
1 pk Froz. chopped spinach,thawed
1 ts Dill
1 Clove garlic
1 Small tomato, diced
8 oz Feta cheese, crumbled
6 oz Cream cheese, softened
Freshly ground pepper PHYLLO DOUGH:
1/2 lb Frozen Phyllo dough
1 c Butter, melted
PREPARE DOUGH - Thaw according to pkg instructions (may be refrozen). Cut Phyllo dough into 6"x9" strips; cover w/wax paper with a damp towel over all. If dough gets too wet or dry, it will be unworkable - but it's not difficult once you get used to it. PREPARE FILLING - In oil, saute spinach, dill garlic & tomato until tender. Add cheeses & pepper. Mix thoroughly until ingredients are hot; cool slightly. ASSEMBLY - Brush 1 strip of Phyllo dough (it's VERY thin, don't worry if it tears a little) with melted butter. Place ts of filling at 1 end. Fold into small triangles (as if folding a flag). Continue folding triangle over & over to end of Phyllo strip. Brush top w/melted butter. Repeat for each strip.*** Bake in preheated 350 oven for 15-20 min. or until tops are lt. brown. ***May be frozen at this point - freeze 1 layer on cookie sheet, store in freezerproof bag--handy to have!!! Recipe :
454g Spinach
1 tsp Salt
100g Onion
1/3 Cup Olive Oil plus extra for brushing
1/2 Cup Bread Crumbs
1 tsp Black Pepper
Fistful of Mint
240g Feta Cheese
2 Eggs
1 Tbsp Dill
Phylo dough
Place the spinach in a bowl and add in the salt and start squeezing the spinach in your hands to remove all the water. Add spinach to a new bowl
Place aside and add the onion to a processor and blitz until small dice.
Add the onion to the bowl along with the Olive Oil
,bread crumbs , black pepper ,mint ,feta Cheese ,eggs and dill
Mix well
Place 1 sheet of phylo on the work surface and drizzle with olive oil repeat this 3 time but on the 3rd brush the olive oil over the dough. Cut into 4 equal parts and add 2 Tbsp of filling to each strip. Fold the corner of the dough over the spinach filling and to form a triangle. Continue folding, maintaining the triangle shape, using the whole strip. Repeat to use the rest of the mixture.
Bake at 400 F for 15 mins until golden brown. Serve with your favorite dip

Greek Spinach Pie Recipe (Spanakopita)
Spanakopita – traditional Greek spinach pie that is made with crispy phyllo dough layers at the top and bottom, in between there is delicious spinach-cheese-herbs mixture. This savory pie recipe is super easy to make. This this is perfect for holidays, weekends, parties or any other occasion.

Ingredients:
7-10 Phyllo (fillo) sheets, at room temperature
1/3-1/2 cup (80-120ml) Olive oil
2 pounds (900g) Spinach
1 Large onion, chopped
2-3 Spring onions, chopped
1/4 bunch Parsley, chopped
1/4 bunch Dill, chopped
12oz (340g) Feta cheese
12oz (340g) Ricotta cheese
Salt to taste
Pepper to taste
1/4 teaspoon Nutmeg
1 teaspoon Dried oregano
Lemon zest from one lemon
Directions:
1. Preheat oven to 350F (180C).
2. Make the filling: in a large pan, heat 2 tablespoons of olive oil. Add chopped onion and sauté over medium heat until golden, add spinach and cook for 5-7 minutes, until the spinach is wilted.
3. Drain excess liquids and transfer to a large bowl. Crumble the feta cheese and ricotta cheese into the bowl, then add chopped spring onions, parsley, dill, lemon zest and spices. Mix until well combined and set aside.
4. Assembly: brush the bottom of a 9X13 inch (22X33cm) rectangle pan or 11-inch (28cm) round pan with olive oil. Take a sheet of pastry and place in the baking dish, that way so that some of the pastry hangs over the side. Brush with olive oil. Add 2-3 more sheets in the same manner, and brush them with olive oil between every layer.
5. Evenly spread the spinach and feta filling over the phyllo crust. Then, cover with 3 layers of phyllo, brushing with olive oil in between the layers. Fold the flaps or excess from the sides and brush the top layers with olive oil.
6. Using a very sharp knife cut the pie into rectangles or any other shape.
7. Bake for 40-45 minutes or until golden brown.
8. Allow to cool for 15 minutes before serving. Serve with fresh Greek salad:
