3 ea Large Eggs, Well Beaten 1 ts Baking Soda
1 c Sweet Milk 2 ts Baking Powder
2 c Active Starter 1 1/2 ts Salt
1 3/4 c Unbleached Flour 1/4 c Sugar
Beat eggs. Add milk and starter. Sift together the flour, soda, baking powder, salt, and sugar. Mix together. Drop onto hot griddle by large spoonsful. NOTE: If ungreased griddle is used add 1/4 c Melted Fat to the above recipe. Bacon fat give a great taste. -----

- 150g active sourdough starter
- 15g oil (or melted butter)
- 1 egg
- 120g milk (or milk alternative)
- 1tbsp sugar (or honey, or sweetener like Vitafiber)
- 120g plain flour (or self-raising flour)
- bit of salt
- bit of vanilla extract (or other flavouring like cinnamon)
- 1tsp bicarbonate soda/baking powder (only 1/4tsp if using self-raising flour).

If you love pancakes but worry about lack of nutrients and blood sugar fluctuations, you need to try these fluffy sourdough pancakes. Sourdough fermentation means that gluten is broken down, these pancakes score much lower on the glycemic index, and because they're fermented, you also get to enjoy all the minerals that would otherwise be bound to phytic acid. Ingredients for the fluffy sourdough pancakes:
1 cup sourdough starter (mine is 80% organic white wheat and 20% wholegrain spelt, 80% hydration. If you don't have a starter, scroll down for the link to my tutorial on how you can make it from scratch)
1 large egg
2 tbsp coconut sugar (or any other whole foods sweetener that you like)
1/3 tsp. Himalaya salt or fine sea salt
1/4 tsp. baking soda
1 tsp. organic baking powder
a pinch of vanilla powder
2 tbsp butter

Sourdough Pancakes | Sourdough Discard Recipe

I make sourdough pancakes while my girlfriend watches YouTube (gone ASMR).
This is a great recipe for using up the discard from your sourdough, especially because it doesn't require any extra flour.
I know I shouldn't use metal utensils with a non-stick pan but I promise I was careful.
Ingredients:
- 2 cups Sourdough Starter
- 1 Egg
- 4 tbsp Oil
- 2 tbsp Sugar
- Pinch of Salt
- 1tsp baking soda
- 1 tbsp warm water
1. Combine the baking soda and warm water separately
2. Combine the rest of the ingredients to form a batter
3. When ready to cook, mix the baking soda and water with the pancake batter
4. Heat a pan to a medium-high heat, lightly greased
5. Ladle in the pancake batter and cook until bubbles start to pop in the middle of the pancake, then flip, giving a minute or so to cook on the other side.
