How To make Sunday Morning Sourdough Pancakes
2 cups Active Whole Wheat Starter
2 Eggs
2 teaspoons Brown sugar
1/4 cup nonfat dry milk -- optional
1 teaspoon baking soda
Mix the active starter, eggs, powdered milk, and brown sugar. Stir well with a wooden or plastic spoon. Add either water or whole wheat flour until the batter reaches the desired consistency. This will require a little experimentation since some like the batter to be as thin as melted ice cream, while others like it to pour thick and slowly. Stir in the teaspoon of baking soda, allow to stand for a minute, then pour onto a hot, oiled griddle (cast iron works best). Flip when bubbles pop in the center & serve when both sides are golden brown. I always use whole wheat starter as it produces pancakes with a much richer, nuttier taste than if white flour is used. I keep a small crock with about 4 cups of starter either actively growing or stored in the refrigerator. You can use starter directly from the refrigerator, but for optimal results, prepare the 2 cups of active starter the night the night before by mixing one cup refrigerated starter, one cup whole wheat flour, and 1/2 cup warm water. Let grow overnight and prepare batter in the morning just before cooking.
Variations: 1. Add a cup of blueberries or other fruit before cooking. 2. Try adding 1/2 cup of buckwheat, cracked wheat, wheat germ, etc. 3. Omit brown sugar and add 1 cup Granola for extra-nutty pancakes.
Waffles: **CAUTION*** Not recommended for low fat diets. Add 1/4 cup vegetable oil to basic recipe and cook in a waffle iron for delicious waffles.

How to Make Sourdough Pancakes, Two Ways
One of my favorite things about weekends are making (and eating!) my sourdough pancakes. They are fluffy and delicious, perfectly complimented with just a drizzle of maple syrup (okay--and some butter), but best of all: YOU'LL USE UP YOUR DISCARD STARTER! No more feeling guilty for getting throw it out when you feed your starter to make delicious loaves; you won't be throwing it away at all, you'll use it to create something else worth bragging about on Instagram ;)
I need to hat-tip to online resources that were pivotal in how I developed these recipes. For the sweet pancakes, I came up with this recipe (ingredients list & measurements below) based on the article by Sarah Jampel on Food52 that pin-pointed the basic formula for excellent pancake batter: 1 cup flour : 1 egg : 1 cup milk. I tinkered with my ingredients based on that theory and came up with my go-to recipe that I use in my kitchen. Here's that article:

Here's what you need to make these sweet breakfast sourdough pancakes:
1 ¼ cup (150 grams) all-purpose (plain) flour
1/2 cup (122 grams) whole milk
¼ cup (60 grams) plain Greek yogurt
¼ cup (50 grams) granulated sugar
1/2 cup (105 grams) sourdough starter
FRIDGE OVERNIGHT (optional) with the above ingredients; then the following day add:
2 tbsp (42 grams) melted butter
1 tsp baking powder
1 tsp salt
1 tsp baking soda
1 tsp vanilla extract
2 eggs, separated

Sourdough Pancakes
There is nothing like waking up on Sunday morning to fresh pancakes. So this recipe calls for a sourdough mix that will get it easier for you to eat more and more.
Every weekend I get ready for the following week’s bake so I wake up my sourdough starter. Instead of wasting and throwing in between the feeds- I make sourdough discard pancakes for me and Z. And with blueberries and maple syrup on top?!?! This is lit.
Ingredients:
250 whole milk (you can use almonds milk instead)
200 gr sourdough starter
90 gr white flour
90 gr whole wheat flour
60 gr Greek yoghurt
60 gr melted butter
50 gr sugar
5 gr baking soda
5 gr baking powder
5 gr salt
5 gr vanilla
2 free-ranged eggs
Preparation steps:
- In a bowl beat two eggs. Add the milk, sugar and yogurt.
- Add the starter and mix well.
- In a separate bowl mix the flours, baking soda, baking powder, salt.
- Add the dry ingredients to the wet ones. Stir well.
- Add the melted butter. Stir well.
- Let the batter sit to rest for 30 min.
- Heat up a great pan with a nice amount of butter. Don’t be cheap- it’s delicious.
- Using a ladle pour the batter on the pan and cook each side for 1-2 min.
- Stuck all the pancakes on top of each other.
- Add the blueberries and the maple syrup.
- YO.
