4 1/4 To 4-1/2 cups whole wheat
-graham flour 4 ts Baking powder
1/2 ts Baking soda
1 t Salt
2 ts Butter or margarine, cut in
-small pieces 2 c Buttermilk
Heat oven to 350F. Grease a large cast-iron skillet or baking sheet. In a large bowl, mix 4 C. flour with the baking powder, baking soda, and salt. Add butter and rub it into the flour by scooping up handfuls of the mixture and rubbing it between the palms of your hands until pieces of butter are no longer visible. Add buttermilk to a bowl and stir with a wooden spoon until mixture forms a dough. Sprinkle about 1/4 cup of remaining flour on a board. Turn out
dough and knead lightly for about 1 minute, working in the flour from the board and forming dough into a smooth, round loaf about 8 inches in diameter. Put loaf, smooth side up, in prepared pan and cut a deep cross in it, slicing three-fourths of the way through the dough. Bake 55-60 minutes, or until loaf sounds hollow when tapped on the bottom. 2 cups of All Purpose Flour
2 cups of Whole Wheat Flour
⅓ cups of brown sugar
¼ cups of granulated sugar
1 tsp of salt
4 tsp of baking powder
½ tsp of baking soda
¼ tsp of ground cinnamon
6 Tbs of unsalted butter, chilled and diced
1 cup of raisins, re-hydrated with boiling water
1-½ cups of buttermilk more or less
All purpose flour for dusting
1 egg
1 Tbs of Orange zest
Bake at 375 degrees for 35-55 minutes until fully baked. I baked mine for about 40min.

About Soda Bread
Soda bread is a variety of quick bread traditionally made in a variety of cuisines in which sodium bicarbonate (otherwise known as baking soda, or in Ireland, bread soda) is used as a leavening agent instead of the traditional yeast. The ingredients of traditional soda bread are flour, baking soda, salt, and buttermilk. The buttermilk in the dough contains lactic acid, which reacts with the baking soda to form tiny bubbles of carbon dioxide. Other ingredients can be added, such as butter, egg, raisins, or nuts. An advantage of quick breads is their ability to be prepared quickly and reliably, without requiring the time-consuming skilled labor and temperature control needed for traditional yeast breads. Soda bread is made with coarse flour (either white or whole meal), or a mix of the two depending on the recipe. High protein flour is not needed for this bread as the texture is described as being moist and crumbly. Other whole grains (such as rolled oats) may be added to create different varieties.This bread does not have to be kneaded and bakers caution that kneading can toughen the dough.Buttermilk or sour milk is traditionally the liquid ingredient due to its reaction with the soda. |

Quick Easy Irish Soda Bread
Ingredients:
2 Cups White Flour
2 Cups Whole Wheat Flour
1 teaspoon Salt
1 teaspoon Baking Soda
1 1/2 - 2 Cups Buttermilk

Guinness Soda Bread
2 1/4 C Flour
1 C Whole Wheat Flour
1 1/2 tsp Baking Soda
2 Tbsp Sugar
1 1/2 tsp Salt
1/4 C Butter - cold & cut in pieces
1 Egg
1 C Buttermilk
1/4 C Maple Syrup*
1/2 C Guinness Stout
3/4 C Raisins
2 tsp Caraway Seed - optional
*Local NY Maple Syrup from Boxler Maple
Heat oven to 400F and place a 10 oven safe skillet inside to preheat - Cast Iron works best
In a large bowl whisk together the flour, whole wheat flour, baking soda, sugar & salt. Press the butter into the flour using a fork or with your hands until it's all incorporated.
In a medium sized bowl whisk the egg, add buttermilk, maple syrup & guinness, stir until well blended. Make a well in the flour and add the wet to the dry. Gently mix just until it starts to come together and add raisins and caraway seeds if using. Mix until blended.
Dust a flat surface with flour and pour the dough onto it. Dough should be fairly wet. Add more flour if needed and knead and fold a few times to form a ball.
Carefully remove the pan from the oven and place a piece of parchment inside. Place the dough in the center and cut a cross into the dough.
Lower oven temperature to 350F and bake for 45 - 55 minutes or until a toothpick comes out clean.
