Yep, another weird recipe, Soda Cracker Torte
Here is an old school, probably depression era recipe. But it is delicious!
It uses egg whites, but don't throw the yolks away, I am uploading a baked egg custard video too that uses the egg yolks!
Soda Cracker (Saltine) Torte
¼ lb rolled/crushed saltine crackers
2 t baking powder
6 egg whites
2 c sugar
2 t vanilla
1 1/c chopped nuts
1 ½ c whipping cream
2 T powdered sugar
Preheat oven to 350 degrees. Mix baking powder into the cracker crumbs. Beat egg whites until stiff, add sugar and continue beating. Add vanilla. Fold in cracker mixture and nuts. Spread evenly in 9x13 aluminum pan. Bake for 25 minutes. Once cooled to room temp, whip cream and powdered sugar until stiff. Spread evenly over cake. Cover and store in fridge over night.
Soda Cracker Toffee {saltine cracker}
SODA CRACKER TOFFEE
This recipe needs to go on your bucket list ! Such a fun candy to bring to parties or give as gifts. Enhoy!
RECIPE:
INGREDIENTS:
48 soda crackers (saltine cracker)
1 cup salted butter (2 sticks)
1 cup brown sugar
12 oz. semi-sweet chocolate chips
1/2 cup chopped pecans
INSTRUCTIONS:
Place foil on a large sheet pan that has a lip on it. Spray the foil with non-stick spray. Add the saltine crackers to the pan. Don't worry if you have to use less or more crackers, the recipe will work just fine still.
Preheat oven to 350 degrees
In a medium-sized pot over medium high heat, add the butter and brown sugar. Stirring occasionally, let the butter melt. Let the butter and brown sugar come up to a boil, stirring often, do not let burn. Let boil for 3 minutes, stirring almost constantly. Pour over the crackers, spread over evenly.
Place in the oven for 5 minutes.
Remove from oven and sprinkle over the chocolate chips. Put the pan back into the oven for 1-2 minutes to allow the chocolate chips to melt.
Remove from oven and spread the chocolate chips over the toffee. Sprinkle over the pecans immediately.
Place the sheet pan in the fridge for about an hour to set.
Break apart into pieces with your hands to desired size. Serve and enjoy.
This stayed good for about 3 days in our house. The toffee seemed to get sticky and stale after that. Would be great for holiday parties!
